Main reason for whipping cream ( especially in no churn recipes) is for air incorporation I believe as it helps create the air and fluffiness that gets put in ice cream as it churns which I think also kind of helps with preventing large ice crystals. So non dairy based ice creams would likely have something that can be whipped up to create air and fluffiness, of course if it's being churned I don't think that really matters but I'm not entirely sure

Non-dairy ice cream can be made with any plant-milk. Rice tends to be icy (so does almond), but full-fat and creamy nuts (like coconut or cashew) make really creamy ice cream. You can also make it from avocados (which, in my experience always has an avocado taste) or even frozen bananas. The possibilities are endless.

Question, is spaghetti ice not known outside of Germany? I only noticed, when Rachel was weirded out by the white chocolate "Parmesan". I think it was invented in Germany, but not sure. Explanation for anyone who doesn't know spaghetti ice: It is vanilla ice, run through a spaghetti press, so that it looks like pasta. Topped with red sauce from strawberries or raspberries and some white chocolate "Parmesan". Pretty much every ice Café in Germany has that on the menu, you can even buy it premade at the supermarket.

As cocoa powder only dissolves when warmed up it would be better if you sprinkled a little on top for garnish and rather add melted chocolate into the mousse. Rachel, you can try the nutella fudgesicle cream by buying a nut-free chocolate spread. ♥️ And I would add marshmallow fluff into the sweet potato ice cream, I think they had it in B&Js Phish Food. The cream cheese flavour was a great idea, yum! The white chocolate shavings looking like cheese is the exact reason why we put it on spaghetti ice cream in Germany, i.e. vanilla ice cream shaped like spaghetti over a dollop of whipped cream and then topped with strawberry sauce and white chocolate shavings.

@lisaflower5994
@lisaflower5994 2 жыл бұрын
I think that’s a great idea! What is missing from the mousse is the gelatine so the instant pudding mix would give that thickening Re the cocoa, if the icecream has enough flavour, is any extra chocolate needed? I think the pudding idea is great, another option would be to fold some whipped cream through the melted icecream and fold through some dissolved gelatine. If you need more choc flavour, either fold through some grated chocolate or stir through some cooled, melted choc Sort of feel like you lose the need for the melted icecream at that point though Cooled melted chocolate and whipped cream and gelatine….. a very simple choc mousse already

Trying to measure out one dry cup of cotton candy was hilarious! Cotton candy is just VERY fine strands of sugar. It melts down immediately in liquids. CN: alcohol Cotton candy martinis are a great visual spectacle. There’s tons of variations out there, but I use 1.5oz vodka, .75oz triple sec, & .75oz lemon juice in a shaker with ice & strain it into a martini glass that has a GIANT pile of cotton candy in it. It’s a great balance of sweet & sour. The liquid even turns the color of the cotton candy.

I make similar ice cream. Instead of plain sweetened condensed milk you boil the can covered in water for approx 3 hours (don’t let the water evaporate and keep can covered). This turns the milk into caramel. Let it cool and then refrigerate. Once cold set aside. Whip one cup of heavy whipping cream and 1 tsp of vanilla to soft peaks. You then fold the two ingredients together kind of ribboning it together. Place in a pan and sprinkle sea salt on the top and freeze. Best salted caramel ice cream 😀

It's always funny to me that people are surprised by nutella ice cream. It's been a treat my Mom always made, when I was a little kid (I'm 35 now). If I remember correctly the recipe originated from Tupperware as she used their popsicle molds (I'm from Germany). It was made differently though. The nutella was melted into the liquid whipping cream, then rested in the fridge overnight, and was then beaten up and filled into the molds to freeze. Unfortunately, I don't remember the ratio but it wouldn't be too much nutella as you'd end up with a ganache. Quick, easy, and super delicious. I remember that we kept asking her to redo it all the time. A great childhood memory. 😍

My kids always called them 'fudgicles', too, until all the adults in the family picked up the habit. So don't feel too bad about it, Chris!

Try putting some of the mousse into a mug and add hot milk. My bet is it will make better cocoa than mousse.

With all the things you could do to improve the ice cream mousse, it might be easier to just make mousse.

If it makes Chris feel any better I have always called it Fudgicle too and never thought about how it's actually written on the box. I wouldn't make that Nutella recipe though because I hate Nutella. Not because I'm allergic, I just don't like hazelnut things. But it's interesting to see recipes that are very simple and have a good outcome. I may try to do the cotton candy one but leave out the white chocolate because I don't like that either. I'm a tad fussy.

I'm with you on hazelnut things. Yuck! I wonder if this would be good with chocolate peanut butter. Or just peanut butter.

I made pumpkin ice cream just like this but just evaporated milk and sweetener. More spices though!

If you want the nutella and milk/cream to mix properly you should heat the liquid first, then it will melt the nutella and mix well, kind of like when making chocolate ganache xx

Hi Rachel! Thank you for another awesome video...I just love all your content and honestly count the days until your uploads. I recently moved from Cape Town to Vancouver and I am struggling to find what we call 'double cream' in South Africa. I think here its obviously heavy cream like you use in the ice cream but I can't seem to find this in the Canadian stores - any advice!?

Heavy cream is also labeled as whipping cream here in Canada :)

This is a first time I have seen anyone scoop ice cream out of a cardboard packaged ice cream XD We always unfold the cardboard "wrap" and then slice the ice cream xD leftover ice will be put into a container and then frozen again xD

A really easy and yummy and healthy ‘ice cream’ especially for kids is 300ml yoghurt full fat and 2 bananas a little ripen. Blend it together and put it in popsicles ice cream molds. And put in the freezer and you have your ice cream. My 2 year old loves it.

For those in other countries... Chapman is amazing! Their guaranteed peanut/nut free stance is amazing as a Canadian brand! They even test their ice cream to make sure it is free even if ingredients say it is! I've never seen an American brand do that and be affordable. Chapman's is one of the cheapest brands in Canada

At Chapman’s, we take nut allergies seriously. We were the first in Canada to produce ice cream that was guaranteed peanut and nut free - and we continue that commitment today. Chapman’s has been recognized by Anaphylaxis Canada for our commitment to allergy safety. Here are a few things we’ve done to ensure our products are safe and contaminant free: · We built a separate facility exclusively for peanut and nut free products, with a dedicated staff and separate receiving doors. · Work with a committed group of suppliers who guarantee the safety of their products. · Use an outside lab to run analysis on incoming ingredients and finished products (to make sure we haven’t missed anything!) · Educate our staff to ensure that nothing nutty enters our facility. · Our ‘red banner’ labelling makes it easy to identify our peanut and nut free products so you can enjoy your favourite treats with confidence. There’s plenty of deliciousness to choose from! Chapman’s Original Ice Cream line, our Lolly’s, Twisters, Sorbets, and a selection of novelties are peanut and nut free.
