Same here Jean they are so fun. I got some shishito peppers last night and wanted to look at some videos of how to make them I was so excited when I saw that The Loons made a video for them. They were absolutely fantastic. I can't wait to make them at the celebration of life party for my Grandmother Virginia Mae Brown.

They look so good. Growing up in New Braunfels in the 60’s, there was a cafe on the highway “The Y” that was open 24x7. After an evening of “socializing”, we would stagger in and order nachos. Crispy corn tortillas with cheese and pickled jalapeños...that’s it. No beans, no meat, no sauce, no lettuce, no edible flowers, just pure TexMex nachos. Those are the nachos from my formative days, just like yours Chris. Can’t beat the simple purity of those beauties. Bonus! They were always served by a waitress with beehive hairdo tinted lavender. Big hair, not kidding. She was great. By the time we were settled in our booth, she would have a huge platter ready for us. The place is a used truck dealership now. ☹️

Yes! That's the more shy one of our two. They're brother and sister, Ebenezer and Florence, or as we call them, Eb and Flo. Flo is usually the one right underneath us while we're cooking, but Eb goes crazy for cheese, which is why he was patiently waiting for a shred or two! We love them so much.
