Absolutely love this series with Bryan. He’s a great host and he obviously knows a ton about food but lets his guest do most of the shop talk which I appreciate.

That man succinctly worded how I felt working in the restaurant industry these past few years. Costs have risen so much that to provide a product that both the customer and the producer love at a reasonable price cannot keep doors open and it's terrible that it's struggling people trying to keep the dream alive. Edit: love the people that keep craft food alive in today's time

I 10000% agree. But at the same time I have to wonder if he raises the profit margins on the OTHER products in order to make losing money in the beef ribs “acceptable”. 🤷🏽♂️

I'll say it again, these segments with Bryan on the road are my absolute favs! This time is no exception, the chef's passion is delightful to watch! My only regret is I live in WA state, there is no TX BBQ ribs like the ones he is eating, man, that makes me so sad! Please continue this content, I love it!!!

I grew up in Houston, TX. I thought beef ribs were the ONLY kind of ribs. Now I live in the Eastern US. Folks over here have only heard of pork ribs. They're NUTS!!!

These probably help with the margins. I have had toreados before. So good spicy, vinegary, salty, and that rice? I’d go there just for those. 😻 Well actually, I’m kidding. I’d need some ribs too, and I was wondering what kind of sausage that was on one of the plates.

The sausage is made in house and it's some of the best I've had. It's typical of what you find in Texas, but a standout among its peers. I know Richard worked hard on getting the recipe just right. @@chrisandersen5635

The next part of this episode was using the snake method on a charcoal grill to cook this at home. If you watch that, I did the brisket with his method and will say this: DO NOT follow the instructions of opening the lid damper all the way. I did and mine cooked too fast and did not come out great. I later found Weber's damper instructions: BOTTOM dampers fully open TOP damper: Smoke zone 225-275, 1/4-1/8 open Low 250-350, 1/4 open Med 350-450, 1/2 open High 450-550, fully open

@@TheSouthIsHot While Texas BBQ is good. By Texas BBQ I only mean Brisket. Your Ribs are not better than the Memphis or Kansas City Ribs. Whether it's whole hog or pork butt it's just better in North Carolina. Not to mention Memphis in May has more than just a brisket category.

A lot of Texas barbecue places are not good in my opinion, only a select few. I’ve only been there twice I think but there’s so many barbecue places in Texas that you have to be careful where you go
