It'd be really cool to get Josh and Ollie from the Korean Englishmen/JOLLY channel to come out and try some of these dishes. If I remember correctly, I believe Josh spent quite a bit of time in China as a kid so maybe some of these dishes might bring back some memories.

Love this! I've always loved minority chefs trying other minority chef's food. Not to say that Caucasian chef's aren't awesome as well but alot of ethnic and minority cooking come from shared back grounds like going thru hard times and using what you have. It was nice hearing the story about the cartilage, I use to get sad bringing homemade chinese food to school as a kid until another kid brought menudo and we sat together and made friends that way

As a US citizen of European descent, I grew up eating fowl and beef offal. I love beef heart, intestine, and tongue. I love chicken gizzards, liver, and heart. Sadly none of those great chicken cuts were featured here. I would probably love duck tongue and pig intestines. Offal is cheap because people are grossed out. But they are usually really good.

If you have any near you, you might want to try Asian or Mexican grocery stores. It varies from store to store, but from my experience some of them carry chicken offal. Otherwise, your best bet would be to get them from a traditional butcher shop or farm. My family usually only gets offal if we butcher the animals ourselves.
