I grew up in North Georgia in the 70's. My great grandmother made "country fired steak" with the white gravy. it wasn't until I joined the Air Force and traveled I'd heard the term, "chicken fired steak." Thank God I spent a couple of years in Texas and got to eat some of the best chicken fired steak on the planet. I miss Texas.

Chicken Fried Steak is one thing I miss about Texas. Up here in Kansas, some idiot decided to call it Country Fried Steak. It is almost the same thing, including the gravy, but they must have really small cows up here. lol

The best is at my house! Hand hammered prime angus sirloin with bacon grease gravy!!! Never had a great CFS in a restaurant! Some average and edible, but never great. Restaurants use some water based BS gravy that is totally flavorless!!! Two tbs of bacon grease, two tbs flour and make a roux. Then add two cups of milk and stir until desired thickness....add salt n pepper. Can also sub milk with half n half or heavy cream!

@@JohnJohn-fz6nt I season the tenderized steaks with salt/pepper/garlic then roll in flour, then drop it in a mixture of two eggs and 1/2 cup of milk, then dredge back in the flour, then in the grease....you can deep fry, but I drop mine in a fry pan with about 1/4” of cooking oil for about two minutes, flip, about two more minutes and it’s ready. You want the oil warm enough for it to sizzle, but not hot enough to burn the breading....

It's "modern" alright, just the last several yrs... When I was taught to cook this in the 1960s, it was called "Chuckwagon"!! As in made with Cube Steak, Chuck Steak, or other economy cut of beef. "Chicken Fried Steak" was made from fillets of chicken breast or somethimes boneless thighs... and was called exactly that; chicken fried steak. But whether beef, chicken, or pork, it's all floured, seasoned, and fried, whether beef; Chuckwagon, chicken; chicken fried, or pork; Country Fried, all steak cuts, and usually covered with milk gravy, made from the grease they were cooked in. Also giving each their distinct flavor, not to mention name. Who started the calling beef "chicken" nonsense was likely someone not real sure of themself in the kitchen!! 🤣🤣

I love Mary's CFS, but I've found a little stop closer to home that I think is better and so does anyone I send out there to try it. The resturant is called "Crow's" and its in downtown Anna, between McKinney and Sherman. Their Chicken Fried Steak completely drops the mass produced resturant stigma you get at other resturants. It's exactly like my grandmother's hand pounded and breaded fried round steak. Their CFS is amazing! But that's not all, everything in their resturant is made from scratch. They also have the best fried catfish I've ever eaten in Texas, and I can't stand any resturant Mac and Cheese, because resturants always try to produce some over the top chef style version. Crow's Mac and Cheese is just like my grandmothers, simple, basic and "can eat a whole pot, delicious". To get the best and sample a little of everything, you should try their Sunday buffet. You'll be amazed!

When I was a teen I worked at Neals Lodges on the Frio River in Concan Texas. It was always packed for alot of reasons but the chicken fried steak was famous and melted in your mouth tender ! I'm 57 now and still wonder if it's the same lol

I am originally from Stephenville, TX. When I was a kid, Jake and Dorothy's had the best chicken fried steak and waffle fries around. Now, not so much. I went back for a graduation ceremony recently, and the CFS and fries were the greasiest, nastiest things I've seen in a while. Of course, it could have been just a bad day for the cook. But, my nostalgia for that place took a big hit that day.

Been to Mary's and it's not even CLOSE to being as good as the Chicken Fried Rib-Eye you used to be able to get at the Leakey Feed Lot (R.I.P.) in Leakey, TX. An absolutely delicious rib-eye steak you could cut with a fork and which would melt in your mouth. I was crushed when I found out the restaurant has closed for good.

Smokestack and gruene hall are way better than Mary's. They branched out and since that happened the quality has went down. They used to cut their own steaks, now they're too busy and get pre cut, it shows. I wont stop for anything other than a beer.

I rode my Harley Road King from my home just south of Waco all the way to Strawn one Sunday just to see what all the bikers were talking about. I absolutely was not disappointed. I was invited to sit at a table with two bikers from the DFW area. It didn't even bother me that one of them was riding a Goldwing. They'd had been there before, it was my first time. Service was good and the chicken fried steak was outstanding. I really liked the fact that it was grilled and not deep fried. Real Good

I know you are referring to the New York Hill restaurant. That place is far cleaner and classier than Mary’s Café, Mary’s is obviously a haven for gluttons disregarding any kind of ambience or sanitation. I thought the chicken fried steak was good, but not great and the salad I got with it was pathetic, just a small handful of iceberg lettuce and diced tomatoes with a homemade blue cheese dressing.

The best is subjective, however I have had the Grist Mill's CFS and it is great. But, growing up in Houston, Texas both my mother and my grandmother's CFS was delicious. I could tell you my favorite (not on this list) but they are already crowded enough ~

Since I first saw this video, I have discovered places in Kansas that know what to call a chicken fried steak. Best in Kansas - Miss B's in Louisburg. Closed Tuesdays, but open for good cooking every other day of the week. Second best - Lucille's, also in Louisburg. Closed Mondays. I think they worked that out together to get everybody fed 7 days a week. lol

I don't remember where it was, but the best place put a cookie in the shape of Texas on top. It might have been around La Grange back when 'the ranch' operated. Or I might be thinking of the Bon Ton Rest.?

I've eaten at Mary's and the chicken fried steak is huge but is very delicious!! The cafe in Tuscola serves the best chicken fried steak I've ever eaten. Mary's is almost as good!!
