Kent, I am a trained and long time chef...but let's face it...we are cooks, one and all if we have the passion for creating great food. And you sir do the profession proud. Your food is what we all strive to make. Good food, kindness and great hospitality. A guaranteed formula for happy guests or customers at the table. I know your grandma and momma are proud and smiling down on you. Thanks for your videos and dedication to the great cowboy heritage!

Amen! Food that is made from the heart is the most tasty. My ex wife said my cooking was very intimidating. I never used a recipe. I learned from my grandma and her 7 sisters on a wood stove in the kitchen. I went to school for Auto Body and graduated and worked for Bergstrom‘s. Two days later I was in the office with the owner. I was offered a security job for double the money to be security at one of his hotels. I learned so much about spices that went with different meats. Oh the head chef would call me or leave a note on how to start different meals. I was leaving my security job and the chef asked my boss if I would help out with breakfast. Yes I stayed and I guess I did a awesome job because they asked me back several times.

My Grandfather came from a farming family in Nebraska. He moved to Chicago after WW2. I have amazing memories of him making me dinners on the weekends. One I remember the most was when he would fry these little steaks them make a gravy in the pan to dip bread in. I remember never wanting to taste it. Then one day it did. It was amazing. He passed away in 2002. I wish I can eat with him one more time

I think few people understand the true challenges of producing an incredible meal on a bare prairie with no electric, no gas, no refrigeration, multiple times a day in the most horrific of weather conditions. CFS was invented here in Beaumont Texas, in the 1940s, at the “Pig Stand #41” restaurant on Calder street (as was TX toast). A customer came in wanting a steak for lunch, but only had 30min. The cook on duty was setup for the day’s special (fried chicken), and said the fastest way would be to bread and deep fry a thin cut piece of beef 🥩. The customer said ok, the word spread, and the rest is history.

If you’ve never visited the United States before, go to the South! I promise you the people are incredibly sweet and the food can not be beat. Southern hospitality is real. Kent’s videos make me homesick for Texas.

burnzy3210 Nothing against any other parts of the country, I enjoy New York and other parts of the east coast, got family in California and Washington state, love visiting out there, but nothing beats the south. Great food and even better people. Come visit sometime!
