Used cider vinegar, Malcolm’s hot sauce, and W sauce for baste. Great spritz or mop sauce. Put pepper on top of mayonnaise first but then your jalapeño and then kosher salt. Came out really pretty and delicious.

I basically cut out heavy carbs from my diet. Deep dish pizza and pasta and moved to mostly meat and good carbs like baked potatos. Man feel better. I do eat donuts I'm not gonna lie and couldn't cut those out but tiger shrimp, pork, and red meat all day. Volpi salami for cold cuts. My go to chef's are you and Mal Reed. Southern style from Tex to Carolina with everything in between is where the best bbq is at.

You don't really taste it at the end. Can use whatever you want as a binder. Mayo, olive oil, hot sauce, mustard, or no binder at all.

Perfectly timed recipe after the Smoked Bacon Blue Cheese dip. I can use the leftover mayo as a binder and then the Garlic Jalapeño rub as shown here. Looks fantastic! I definitely need to look at adding an Outlaw smoker to my repertoire.

Heath ~ As always your videos are informative, articulate, and well produced. I enjoy watching the various, and different, techniques you use to make some amazing BBQ! You really have some great regional recipes and are a true master of your craft. As a future idea, would you or any of your contemporaries (Malcolm Reed, Kosmo, Greg from Ballistic BBQ, etc.) ever think about doing some in-depth videos about the differences between rigs, pits, and smokers and how a backyard cook, like myself, would properly care for them to get the most out of it over a long time?

Tommy, I love to wrap with my Butter Bath. Used it a lot and it's won me a lot of contests. You can wrap with butter, honey, and brown sugar as well.

I've heard of people using mustard as a binder ; but never heard of using mayo... Great bbg is a experimentation... U'll never knw how it'll turn out until u try it... Can u do a video on ur outdoor kitchen/grill setup??

You can use anything as a binder tbh. I've seen some people do tartar sauce. Yeah, we could definitely do that in the future
