I'm doing a rack of baby backs and a rack of St. Louis ribs today. Memphis style baby backs, dry with Rendezvous Seasoning. Wet spare ribs. Also, some flanken short ribs, fried corn and BBQ beans. Can't wait.

Get one! SPG reverse sear on the smoke to 128 internal. Then just sear off. Rest for 15 minutes! Cut AGAINST the grain thin. Mmmm the best.
