There is such a thing called Sweetened Condensed COCONUT Milk and that would also taste great in this recipe instead of the regular SCM.

Reminds me of my salad recipe. I use berries versus tomatoes in my green leaf salad. And I put chopped green olives, tuna and dressing. Yum!

I found it online when researching unique pies, it's served at a little diner in Round Top Texas, I don't remember off hand what part of Texas it's in, but I do remember it saying it was an incredibly small town of a few thousand people.

I like the way you put together your pie! It look like it would cut better and be easier to eat. The lady next door broke her ingredients into large pieces! I chose your way.
