My favorite Ragdoll "type", if you could call it that usually happens on demoman. If you kill a demo from the front with a shotgun shot to the upper chest area while he's walking forward, he'll often ragdoll in a way that makes him look like he slipped. His legs kick out in front of him, and he falls on his back, usually. Even better when he's charging.

There’s also a command that disables gibbing -(locally, not server)- for even more funny ragdolls, and another command that forces gibbing -(also locally)- for the reverse effect. Sadly I forgot the actual commands, but I’ll post them here once I find them. Edit1: the command to disable gibbing is tf_playergib 0, but it’s actually a serverside command.
