You can use the flowers to dye alcohol and it will color change when you add acid. A lot of gin makers sell purple/blue gin that is dyed with butterfly pea flowers. I have a bottle of empress gin I use to make color changing french 75s

You can trim it to whatever you like. The bigger the vines the more flowers though.
