I love this snack! I have the same cast-iron pan too! I make this snack and dip with my mom's homemade fishsauce. I wish I could add the corn but I can't have corn, so I only top it with green onions.

lamblion1234 My mom's fish sauce is made with sugar, salt, msg, vinegar, fish sauce and water (boiled in a pot on the stove). The longer the fishsauce sits, the flavor enhance and becomes more favorable as time passes. Its delicious! The little pancakes I make are usually bland because I don't use coconut, so dipping it in the fishsauce really give it flavor.

lamblion1234 I forgot to mention adding finely minced garlic and chili peppers. I add those before serving. My mom's homemade fishsauce is the Vietnamese fishsauce. The sauce is a delicious balance of sweet, tart, salty and spicey. It a condiment used for variety of dishes; ie: spring rolls, rice noodles, salad dressing, etc.

There's a similar food that uses a pan like that, called Banh Khot. It's a Vietnamese food and it's my favorite when I come home. ☺️

if you dont have the sweet rice flour (also called glutinous rice flour), try normal rice flour instead

Dear tastemake: it's actually spelled æbleskiver pan. Here in Denmark where they originate from we have æbleskiver especially around Christmas time. Æbleskiver actually translates to apple slices, you pour a sweet pancake batter dough and add a slice of apple that you push into the batter in the pan, then as it sets you keep turning it so it ends up round as a ball.
