In this video I will show you step by step on how to make Thai Coconut BABIN | Glutinous Rice Pancake With Coconut - Chansamai's Kitchen. Have you ever try this delicious dessert? If not, continue watching and you will get the idea on how to make it.
Ingredients:
- 1 bag (1lb /16 oz) glutinious rice flour (green bag)
- 1 jar 14 oz of young coconut strips/string in syrup
- 1 (14 oz) coconut milk + 1/2 -3/4 cup of water
- 1 cup dry coconut flakes (unsweetened)
- 1/2 cup sugar (I used stevia)
- 1/2 -1 tsp ube color (taro flavor) you can use pandan extract or vanilla extract.
- 1/4 tsp salt
- Oil or cooking spray for frying the pancakes
Tip: Let the dough rest for 30 minutes as the flour/dough will fully absorb all the moisture for better and soft pancake
