I went there to try already. TomYumKung tastes authentic. That’s not much spicy much but I enjoyed every taste of the soup on the spoon that touched my tongue. Very good ingredient. The uncle chef is the master of cooking. He is so humble and generous. Truly recommended!

The secret in this tomyam 1) plenty of herbs in chicken and pork bone stock 2) cook on charcoal stove 3) use the oil from the shrimp head 4) extra herb he used in the hot pot was culantro 5) add seasoning in the bowl (this, my mom also taught me. She said lime juice will turn bitter in the heat so better season after you put the soup in serving container)

My wife & two friends visited only last week. The restaurant & recipes remain exactly the same. The master chef is still incharge of everything, even at the age of eighty-two. They now have another restaurant diagonally opposite, to cater for the overspill when it gets too busy. He told us that his father started the business over ninety years ago. It's a must place to visit, because it's part of a dying breed of excellence & authenticity, at an affordable price - marvellous.

When he eats something that's just ok or not that great, Mark usually has a slightly surprised expression in is eyes, expresses a short "hmm", and nods his head a bit, before saying what the ingredients tastes like in a very analytical way. That way, he never has to rude about the food he tastes and can keep up the good and friendly vibe.

Mark, You need to try Tom Yam Pla Ensee from my favorite restaurant near Ban Phe, Rayong. Totally clear soup, and a flavor to die for. Their Pad Thai Pla Ensee or Ruam Mit is also outstanding.

Actually, Tom Kum Koong is divided into 2 types mainly. The most popular one always served foreigners is added by chilli-paste and coconut milk, it is less spicy and little sweeter. But this one is absolutely original, it presents best smelling of herbs, freshness of ingredients and cleanliness of soup together with strong spicy and sour taste. If you wanna try this type, you can order in Thai that "Tom yum Koong nam sai"

The drill .... take mouthful, circulate head in clockwise fashion, laugh to the tune of ‘hoo, hoo, hoo” .... make sure one eye opens wide while squinting the other simultaneously. If not quite so delicious, follow same drill but replace circulation of head with a simple nod and say “Yeah .... yummmmmm”. Great !
