I’m guessing that you said no, because I don’t either. Much better to just watch Thai ladies with years of experience cooking these very sophisticated flavours.

Wow I just got back from Phetchabun from my GFs village and this is like a carbon copy!!!! It always amazes me how food just materializes at the house, turn around and there are like 10 plates and bowls on the floor with great food. And Thai lady always seems to sense when you are hungry, you just think to yourself, "I am a bit hungry", and food appears out of no where. God I love village life with a nice Thai lady:):)

You are a lucky man Brad , Ta is a good woman and the Thais have the right idea about life , food and family :) I believe we could of been neighbours in oz as I am Peakhurst (next to Mortdale) born and bred but moved to Tassie about 3 yrs ago , I am coming back to Thailand for a visit with my youngest son some time this year he will be 20 and I would love him to meet a nice thai girl lol , I loved it there and I need a holiday!

Hey Brad, maybe Ta's mother can show us how to make a peppery sweet concoction called " Nam Pick Pao (Bao)." This is not Thai, but hopefully Ta will understand. I used to eat this back in the day with just English cucumbers and white rice. I really loved it.

+Anthony White I think you mean "Nam Prik Pao". There a great cooking channel called "Hot Thai Kitchen". Try going there. She speaks perfect English without an accent, teaches very well and is very pretty to boot. Hope this helps.

Yet another great video, Brad. I have a couple of suggestions as to how to tenderize the buffalo meat. Make a cup or two of black tea, allow to cool and then use to marinate. The tannis in the tea is a natural tenderizer. You can also use any citrus juice, rice wine, and vinegar as a marinade - acidic liquids soften the muscle fibers. Another method is *velveting* and it's a quick method to soften meat (ancient Chinese secret 😁): Velveting involves coating and marinating pieces of meat in a mixture of cornstarch, rice wine, egg whites, salt, sugar and soy sauce (optional) for about 30-45 minutes. Hope this helps!

That particular seeds (black with brown cover. The leaves of that tree is also eatible) which is used only by the Northern Thailand is also very famous in Nagaland (India). We also use that spice in our dishes but don't know what to call in English. Indeed trying to find that name in English. Brad if you get to know let me know. Thanks

If another woman (i.e. feminist) asks me why so many men go to Thailand to meet women I'll show her this video. I know not all Thai women are like this but you've got an infinitely better chance of meeting a good woman in Thailand than you do in the western world. Great video of country life.

G’day Brad. I’ve never had decent Buffalo ,always chewy so I think it’s that kind of meat. Great video , Great to see some action up in the North especially on the home front. Ta is getting more confident also . But I’m wondering has your stomach survived the test ?

G'Day Paul The buffalo that was boiled for hours was fine and the flavours were great. The meat is comparatively expensive and so would rarely be eaten by Ta's mum. Ta said to her mum, "the meat is too tough, we'll give it to the dog." Mum's reply, "no, it's too expensive." 555 My stomach was excellent all week. I was actually very surprised. Have a great day. G'Day Fransje Ta has told me that you can tell how good a wife a Thai woman will be by how well she makes Nam Prik (uses the mortar and pestle). If she pounds soft and slow, she's lazy and she won't be a good wife. 555 It certainly is a labour of love.

We were both suffering from a lack of sleep from the previous couple of nights and awake at 4am that morning. Our sleep patterns were all out of whack for some reason. :-(

You brave Brad, I can't eat if it is too Spicy, my wife makes a separate dish for me. The first time I had Papaya Salad ( Thai style ) I took a big mouth full, it was so HOT my eyes watered I couldn't see & my tongue burnt, but !! without chillies & black crab ( yuk ) Lovely. She says no spicy no taste.

Hi Brad. The ladies did a great job preparing all that food, and you did a nice job filming, thanks. 35 years ago I went to Pakistan and everything was done by hand so cooking and cleaning up took most of the day. Now with microwaves and so much prepared food it's easy. I've gotten lazy and would have a hard time doing so much preparation. Take care, Dennis

Hi Brad, Time poor, never heard it put that way but so true. I have another question. People here go on vacation or holidays more in the summer, is that true there as well? Here the children are out of school during the summer so families usually take their holidays during that time.

It seems like summer never ends here and so people prefer to vacation in Winter (December / January), which also coincides with the New Year public holidays. At the start of 2018, Ta had 11 consecutive days away from work (made up of vacation leave, public holidays & weekend) and that was her longest break from work EVER. Thais love to squeeze in short vacations around the 13 National public holidays that take place each year.

I went to visit my aunt in Yasothon a few years ago and she had made me an Omelet as I got a couple bites in I notice these little white round looking things in the omelet. So I asked about it and she told me they where ant eggs. They didn't have any kind of taste to them and texture wasn't too bad but I could eat it after that. Lol... I like seeing your adventures in Thailand, thanks for sharing.

Gday brad and ta ,a lot of work for a meal hey , chon has a nick name it is bow she hates me calling her but all her family call her by it 5555 ,i know the feeling of the cooking aroma i was married to a phillipino 10 years ago just about choking sometimes .The boiling part made me laugh thinking of the old saying about cooking a gala " put rock and gala in boiling water when rock is soft eat gala " Great video thats one thing about thais they will invite you to their dinner table without a second thought take care .

The buffalo will cook well in a pressure cooker - maybe in 1-2 hours. Tough meat needs to be marinated in vinegar to be soft enough to eat, so was the pan fried buffalo marinated in vinegar? I can see it was marinated, but was vinegar put in the marinating sauce?

G'Day Some of these spices are only commonly available in Northern Thailand. Hence the reason Ta stocks up whenever she travels back home. Have a great day Brad & Ta

G'Day Have you ever met a traditional Thai family? I do the washing up back at home in Bangkok, but it would bring shame to my wife if I did the washing up in front of her mother. Ta's mum isn't even happy that I wash the clothes at home. Her mum believes that a man and a woman's clothes should be washed separately and the mans clothes should always be washed first. A man should never wash a woman's dirty clothes. Ta and I don't maintain those beliefs in our own home. The Thailand that you see with bars and in the tourist areas is certainly nothing like the traditional Thailand. Take care Brad & Ta

Townsville, Built a house after I got back from Afghanistan with the wife and kids. I'm keep to go over and people watch and explore the life style. But the wife isn't as keen unfortunately. That's why I watch a lot of stuff on Thailand.

Why didn't Ta wash the pots and pans in the sink? Must be a cultural thing. When you said that they eat everything, it reminded me of when the first Vietnamese refugees first arrived in San Francisco. They had to be told that you can't kill the water fowl and animals in Golden Gate Park for your supper. As a side note, six months after the arrival of the "boat people", you couldn't find a stray dog in the entire city. They would be known to "adopt" animals at the shelters like they were visiting a Supermarket. Different cultures, different ways of looking at the world.

Vietnamese, Cambodian, and Laotian refugees were poaching deer, porcupines, skunks, doves, woodpeckers, robins, baby birds, duck eggs and fish. Officials translated state game laws into the refugee languages and even put on slide shows, to no avail.Now comes news from Seattle that Laotian Hmong refugees have been growing opium poppies in their vegetable gardens. Someone asked the police to identify the bright red flowers. Seattle police found more than 4000 Papaver somniferum.Vietnam remains with us, in odd and unpredicted ways.

I grew up in Bangkok as a child. We never ate dogs or cats nor did I ever heard of anyone eating them. I was never aware that certain group of Southeast Asians consumed dogs or cats until I moved to the US. I don’t think it’s as common as you make it sounds.

tom4wlt Just Google it. The Chinese have a huge dog meat festival every year. What's really awful is that because of some dog meat preparation techniques, the dogs are boiled alive. That's right, boiled alive, the cooks say the meat is more tender that way. We boil Lobsters and say that they don't suffer. Are the seafood restaurants just as awful?
