This episode is part of a special video series: 5 Colours of Thai Rice! Did you know that Thai people nowadays are eating so many colourful varieties of rice? That's right! There are several options of Thai rice you could be having with your Thai meal! In this series, I am giving you the lowdown on 5 types of rice Thailand has to offer, each with its own unique colour, and these are the 5 main types that Thai people now eat on a regular basis.

About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the KZbin channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via KZbin videos, her cookbook, and cooking classes. Looking forward to your next videos. I love jasmine rice. Making it 40+ years. When we rince the rice and drain, we loose stickyness AND some of the flavour or scent. Adding a pandan leaf to the pot fixes this. Sometimes, we "Want" it stickey. Also, even when we drain, there will be residual water so I find the best method - for consistency - is to go by weight, not volume. So weight you 200g of dry rice (about a cup dry). zero the scale. Rince, drain etc, then back on the scale, and top it up with water until you reach the 1.25 ratio (250g) of water. Add a pandan leaf and cover, cook as usual in a pot or rice cooker. Have you ever made it via the steam-only method?

I am so crazy for Jasmine rice. My Mom is a Filipina and Jasmine from Thailand is the best. My Moms favorite Jasmine smells like popcorn when it is cooking. Jasmine is the best rice point blank.

Been looking to change rice and found your Chanel, subscribes the first episode. Found this rice in Publix, Florida. Thai hom mali rice jasmine fragrance long-grain rice And it has the green label originated in Thailand. Pretty excited to try it.

very interesting, i'm looking forward to see the next videos, BTW i buy my jasmin rice at mercadona, which is a spanish supermarket and it's what we here call 'white brand' or "marca blanca" that are brands owned by the supermarket, and it quite nice, it smells awesome

I live in South India (Rice bowl of INDIA), here we use the rice where I use 1part rice to 4part water, but I must confess that they don't have specific fragrance as such, but very economical. anyways I am curious about black rice and it's nutritional value... by the way I love all your vegetarian recipes cause I am pure vegetarian. thanks for sharing your recipes.

My rice cooker at home has pre-set cook times, and cooks for either 45 minutes or 35 minutes. I realize this is dumb, since most rice cookers have a switch for cook and warm. Anyhow, is there a set time for cooking jasmine rice? Or does the cook and warm setting work just fine?

In India, we use pasta method for most of our rice...esp in south india.

Actually the Goan traditional red rice can only be cooked using the pasta method...again just because i go to thailand and cook my basmati rice using the draining method doesn't make it thai...:)

Do you know which rice would have the least amount of arsenic? Our naturopath tested us for heavy metals and minerals and much to our surprise my husband tested extremely high for arsenic 😱 we were advised not to eat rice regularly, but if we do to only eat white rice and to cook it the pasta method. I know this is a strange question but I thought maybe you might have knowledge of this so I thought it wouldn’t hurt to ask. Any guidance you can give would be appreciated 🙏🏼

Did a quick Google search and apparently Jasmine and Basmati are the best www.healthline.com/nutrition/arsenic-in-rice#TOC_TITLE_HDR_7 - so that's good to hear :) Otherwise if you're concerned you can take the steps mentioned in the article. Cheers! Adam

Brands would help a lot. Have a few of my favs. Half way between Basmati and Jasmine is sushi rice. Not for me. Short grain (Korean or Japanese) specially the sticky version of these rices are what would be likely best. But a big favor for Basmati (Indian Curry), and Jasmine for Thai, Chinese, and Vietnamese. Recommend some brands for viewers. Thanks.

Think an old favorite of Basmiti Rice was the Elephant 801 brand, also an affordable one is Royal. For Jasmine I used Golden Phoenix in large bags, Three Ladies is quite good as well and others too, like you say, depends on taste and desire. Seems both Elephant 801 and Golden Phoenix are hard to find now.

Yes, cheaper rice in thai bag....I got the imitation..... Mahatma has a full purple bag that has the green seal on it, that rice is amazing. Now they are selling a white bag without that seal and it tastes different, but they are still advertising as the same rice when it clearly isn't.

+Scott Blessley same amount of water applies but you gotta measure by volume for the ratio provided :)

I would use less water than that. By such a large quantity lower parts of the rice would be dunked underwater much longer then the upper parts and become mushy. So I would really just do 1:1 ratio at max so the rice can steam evenly.

You might want to start with 1.25x first just in case, unless you already know 1.5 works with this brand of rice :) That's a lot of rice!!

82ooo You might be cooking it too fast. and you really should use 1.5 cups of water. one cup is great for rice that you're going to make fried rice with :)

we put rice in boiling water, wait untill water boils again and turn the heat to minimum. I think to try put rice in cold water

Why is it not on the healthy side? It still has a lot of fiber right? Or is it too many simple carbs? Sure the other types of rice are healthier, but this rice is also not bad for you I think.

Basically when it comes to what is common as white rice, it is derived from brown rice which has the brown skin. After it is milled, the brown skin is removed and you will get white rice. And with japanese style polished white rice is the milled white rice is further polished to get the shiny surface. Almost all the fiber in rice is from the brown skin found in brown rice. Another version is the red cargo rice which has a red skin which is similar to brown rice. Recently Thailand has cross breed a new rice crop that is a cross of Thai hom mali rice and black rice plant to get the riceberry rice which is the black rice. It is almost sticky like the japanese short grain rice but full of nutrition and fiber like the brown rice. White rice have been ranked based on the glycemic levels which Thai jasmine rice is on 79 level. While Japanese short grain rice is in the 90s level. As such, it was indicated that too much white rice makes people prone to diabetes due to mainly it glycemic index. As such, the healthier option is brown rice or a mix of brown and white rice to introduce more fiber and nutrition to eating white rice alone. However, like any kind of food, healthy or not, it is always about moderation and not solely eating one type of food and nothing else. There are minimal cases of people developing diabetes from eating too much rice but you will more likely get diabetes from too much processed sugar that you will from rice.

White rice has high GI, but especially Jasmine rice. This means that the sugars in the rice are broken down by the body extremely quickly leading to insulin spikes. You could almost equate eating a bowl of Jasmine rice to drinking a can of sugary soft drink. They both give your body a rollercoaster of blood sugar fluctuation that is generally considered unhealthy and a contributing factor to diabetes.

commando602 Portion size control. Almost all video of asians cooking rice on youtube, there are comments saying things about eating rice and being fat or slim. Genetic might be an important reason, but food portion size is another major one. I watched a lot of video of food being cooked or consumed in North America. I get shocked everytime I see the size they serve. Most of them is like 3 or 4 time of serving size in Thailand.

100% Thai jasmine rice is 94% jasmine rice + others The best Thai jasmine rice cannot be found in Thailand lol I prefer old Thai jasmine rice to new crop; less moisture

THE THAI JASMINE RICE REALLY ORIGINATED IN THE PHILIPPINES AND NOT IN THAILAND. THIS TYPE OF RICE CAME FROM PHILIPPINE RICE BREED CALLED "MILAGROSA"

Hi Jose! I'm not sure why you are posing this here, and why it's all in capitals, but this is just one of many theories on the origin on Thai Jasmin rice - another is "... that the rice variety came from Thailand and was imported by President Ramon Magsaysay in the 1950s. The naming is supposedly in honor of Milagros Magdangal, a woman from Pampanga province." Do you have any facts on this one way or the other? Would be interesting to know. Cheers! Adam
