Follow this recipe to learn how to make sticky rice the authentic Thai way. Get more details here: www.eatingthaifood.com/2015/02...
In Thailand, sticky rice, known as khao neow (ข้าวเหนียว) is the staple in the northern and northeastern regions of the country. Many Thais that originate from sticky rice regions, eat sticky rice multiple times a day, for breakfast, lunch, dinner, and even snack. For this sticky rice recipe, I’m going to be making it the same way they make it in Isaan and other parts of Thailand, and I’m going to be cooking it right on my Thai street food cart.
Sticky rice is often eaten with salads and grilled meats, dishes like som tam (green papaya salad), laab (minced meat salad), and all sorts of grilled meats and fish. Along the streets of Thailand, nearly everywhere you look in Bangkok, you’ll find food vendors grilling up skewers of pork called moo ping, and they always (unless they run out) also have sticky rice. The combination is one of the ultimate snacks combinations of Thailand.
In parts of Thailand where sticky rice is the staple, it’s typically cooked in the morning for the entire household, and then transferred to what is called a kratib khao neow (กระติ๊บข้าวเหนียว), a basket that is specifically made to hold sticky rice - it’s just a cylinder bamboo basket with a lid, and it keeps the sticky rice moist without getting crusty throughout the day. When meal times roll around, all participating eaters grab a handful portion of sticky rice and proceed by taking a ball of sticky rice about the size of an olive, dipping it into the dressing of one of the side dishes at the table, and consuming.
How to make sticky rice:
It takes a little time and some thinking ahead to make sticky rice, because just like cooking beans, you have to soak the rice before you cook it. It’s best to actually soak your sticky rice overnight, and then cook it the next day, but if you don’t have that amount of time, of if you wake up one morning and all of a sudden decide you want to cook sticky rice, you should soak it for at least four to five hours. All you have to do is put the raw sticky rice is a bowl or tub, and submerge it in room temperature water, and allow it to sit. You don’t even need to rinse the rice, just let it sit and soak. After the rice has been soaked, it will become a little swollen and much softer, so that it won’t take too long to steam.
After soaking the rice, I then transferred it to a cone shaped basket used for steaming. The rice then needs to steam in a pot with a few inches of water at the bottom for 15 to 20 minutes, but usually it just takes 15 minutes for me - that is if I soak the rice overnight. If you soak the rice for less time, it may take a little longer to steam. To steam, make sure the rice is elevated above the boiling water, then cover it somehow so the steam remains within the rice.
After 15 minutes you can remove the lid, and check to see if the rice is fluffy and not crunchy at all. If it’s still a little crunchy, just put the lid back on the basket, or whatever steamer you’re using, and allow to steam for a few more minutes.
For this Thai sticky rice recipe I used one kilo of raw rice, but you can really use however much you want, and the exact same directs and steps will still apply. If you soak your sticky rice overnight, then follow this recipe, you’ll have beautiful, hot and fluffy sticky rice every time… and it tastes amazing!

For the non Thais, sticky rice is different from the normal rice. Look for “glutinous rice” printed on the pack. Yes, you need to wash the rice. I would say rinse the water 3 times should be enough.

You have all the right equipment there and I’m sure the rice comes out nice but I would like to add a couple of things here. I was married to a Thai woman for 32 years and she made sticky rice every day. The only difference in your method and hers is that she would soak the rice for an hour and steam it for an hour eliminating the need to soak it over night. The only other thing is after the rice is done steaming she would roll it out of the basket onto the counter top and spread it out a bit to release some of the steam and the gather it all back up and put it in the bamboo basket you showed for storage throughout the day. I miss her and her cooking. She was a master.

I used a combination of this recipe and 2 others including a sticky rice vinegar which called for Mirin (I used Sherry) in addition to orange and lemon slices added to the rice vinegar and sugar and Kombu/kelp, Also there was also a variety of different stages of cooking and cooling the sticky rice before you take the lid off as well as how much water you should add after soaking it just before cooking and I opted for a little over 2x the amount of rice that I thoroughly washed and soaked for multiple hours like you advised, having incorporated your "pre-soak" methods as well. Then I just boiled/simmered and cooled it in a stainless pan with a heavy bottom for a total of about 40 mins with just 15 mins on low after boiling for a minute . I utilized the "cutting" method to fluff the rice in a separate casserole and sprinkled the vinegar dressing over it. Yumm.

In Malaysia, on certain occasion, we add some turmeric powder when soaking it with water. It will give beautiful color to the sticky rice. Usually we eat it with rendang, curry or grated coconut mixed with palm sugar/gula melaka and pandan leaves.

Sticky rice will stay pretty wet and edible for a good day or so, it takes a few hours to cool down and harden a little. Sticky rice is best when it's fresh. You can eat it with some beef jerky or some pickled catfish and eggs, or pickled pork. Or you can even use pickled leafy veggies. That's part of the Laotian way to eat it. I myself like to press the rice into a patty and add a little fish sauce. It also goes well with ranch.

Great video! Just wish more people would acknowledge that sticky rice is a staple in LAO cuisine... we literally call ourselves “louk khao niaw” which translates to “children of sticky rice”. I know that sticky rice is eaten in Thailand especially in the Isan region (that’s because they are actually originally Lao people)... but it’s not a staple, Jasmine rice is the staple for Thais.

I just wanted to share a great method for fast sticky rice. I only soaked it 1 hour and wrapped the rice in a clean damp cloth that was the thickness of a scarf, although i imagine using a clean dish cloth will give the same result. Tie a knot in the cloth so the rice is enclosed like a ball. Use about a inch to inch and a half water in a standard pot and bring to boil and turn to a simmer. Put your cloth ball in the pot but only so it is being held between the pot lid and rim of the pot, and so the ball doesn't contact the water. Leave for 20 to 25 mins and turn off heat and let it sit there for another 5 to 10 minutes. The result is just how sticky rice should be. Of course the longer soaking of the rice is always the best advice but honestly you are unlikely to notice a difference when trying this method.

Hi Mark Wiens ! Great tutorial, that rice seems to be perfect! I have a question, what about to "wash" the rice? I'm askinng because In some countries the rice is washed before cook to avoid the use the white residual water (looks like coconut milk) Do you wash the rice before prepare it or do you keep it to obtain the sticky effect? Hugs mate!
@MarkWiens
@MarkWiens 9 жыл бұрын
Mochileros Hey Nelson, muchas gracias. For this recipe I didn't wash it, I just soaked it overnight and some of the white starch came off in the water while soaking. Then I just drained that water before cooking. Hope you are doing well!

Thanks for the tip! Maybe the white water helps to make the sticky effect. I usually use the "umami" and garlic to enhance the taste but never tried the sticky style. I will...! Cheers!

Yes, you can steam those regular rice, too. You can use like the one he meant it you could go buy a steamer. You need another pot of boiling water. When you steam the rice for 45 minutes. Once the rice is ready, take out the rice into the bowl and pour hot boiling water above the rice. Soak it until there no more water in the rice, but have to stir it 3 or 4 time. When there no water and restream the rice again for 45 min.

Some peeps suggest using boiling water after rinsing to soak the rice instead of waiting overnight. Then drain after 20 min. Steam as per your instructions.

Sakarnov traditionally, Thai people don't eat sticky rice. People who eat sticky rice as their main stable diet for their meals are either of Lao origin or who are associated with the Lao people. Historically, northern Thailand and eastern Thailand were both known as the Lao kingdoms, the Eastern Laos, and Western Laos. These people are Lao by ethnicity, but since there was a period in history where the Thai government systemalically made everyone in the kingdom of Siam called themselves "Thai", this was known as "Thaification". This didnt just apply to only the Lao people, but also to the Chinese, Khmer, and Malays, everyone. Anything "Lao" was replaced with "Thai". Calling yourself "Lao" was looked down upon. Back in the days, eating sticky rice, larb, numtok, papaya salad was looked down upon and considered "country". Now the Thai want to capitalize on everything by putting "Thai" in front of everything, i.e. Thai basil, Thai eggplant, Thai boxing, which is ridiculous.

What we do in Scotland with the sticky rice after we cook it is, while its still hot we add a tin of evaporated milk and some sugar and eat. We also like it plain with plenty of salt and eat it with a pork chop or steak. Delicious!
