In today's episode, Rinda is sharing a special seafood treat - Dungeness Crab in Curry Sauce! This delicious recipe popular in southern Thailand is sure to get you out of a crabby mood! The spicy and sweet curry-egg sauce adds a unique and delectable taste to the salty and fresh crab flavour. If you have ever wanted to try cooking crab, this is a good place for a beginner to start! Dungeness Crab in Curry Sauce - ปูผัดผงกระรี่
2 Servings
Ingredients:
1 Dungeness crab - about 1 kg - for crab preparation see video.
2 Tbsp of cooking oil.
4 Cloves of garlic - crushed.
1 Head of sweet cooking onion.
3 Eggs
1 ½ Tbsp of crushed palm sugar.
3 Tbsp of Thai light soy sauce.
½ Tsp of sea salt
3 Tbsp of Thai chili paste with soybean oil - น้ำพริกเผา
3 Tbsp of curry powder.
2 Hot Thai chilis
2 Stems of Chinese celery , cut into pieces about 2 inches long - see video
3 Green spring onions. - cut into pieces about 2 inches long.
½ cup of water.
Method:
First, we have to make the curry sauce to be added to the crab when cooking it. Add eggs, crushed palm sugar, Thai light soy sauce, sea salt, and Thai chili paste with soybean oil in the bowl, and beat well. Add curry powder and mix well, making sure all the curry powder and ingredients mix well together, then set it aside.
How to clean the Dungeness crab: Run cold tap water on the crab and brush it clean throughout the crab, see video. How to break the crab open: see video.
Place a wok or large pan on your stove with high heat, add 2 tbsps cooking oil. When the oil heats up, add crushed garlic and cooking onion and cook until garlic and onion slightly turn yellow, then add Dungeness crab. Stir well, cover it and let it cook for 3 minutes. Then add the egg sauce, stir well making sure the egg sauce mixes well with the crab, cover it and let it cook for another minute. Then add 1/2 cup of water and turn the heat off. Then add fresh hot Thai chilis, the Chinese celery and green spring onion. We serve this Dungeness crab in curry sauce with cooked Jasmine rice.
Taste profile: Lead by the sweetness of the Dungeness crab, followed by a rich, creamy, and savoury crab curry sauce with the heat of the hot Thai chilis at the end. Bon appetite ka 🥂🍻
