What i found to be a good method to not water down the potatoe flavor (which is the whole reason for the sous vide shenanigans i guess) is to simply put the potatoes in the oven for about an hour @180°C. Then you mash 'em with the butter, cream and all the other stuff. Tastes really good and no sous vide required. ;)

Sous vide is extremely basic. Super easy and not as expensive as everyone thinks. Anova has a precision cooker for around $100 and all you need is water and ziplocs. Best purchase I've ever made. Makes cooking any meat super easy.

A lot can change in a year. Currently, I have a job and an apartment. Last year, I was homeless and living in my car. On thanksgiving, a friend gave me a few leftovers. Green bean casserole, stuffing, mashed potatoes, cranberry sauce, gravy, and some turkey. I had some orange juice as well. In a normal ceramic bowl, I combined them into what I've taken to calling '2017 stew'. I heated the mixture in my car using a jerry-rigged stove made using a ceramic plate, some of those little tea lights (unscented, because I could get a pack of about a hundred for super cheap), and one of those metal stove drip pans (close to the size of the plate) which was inverted over the burning candles. When the mix was too thick, I would add either some gravy or a splash of orange juice to thin it out. If it was too thin, I would add more of either stuffing or mashed potatoes to thicken it. I never managed to get it 'hot', really, but it was at least lukewarm (a welcome change, given the cold weather at the time) and tasted like thanksgiving in a bowl. So... if you folks have leftovers around this year, why not give it a shot? Just play fast and loose with it (and use a proper heating method, because that 'stove' I made was janky as all get out). And remember to be thankful for the basic things you have. Like a place to live. And food. Remember those that've helped you get to where you are today, and have a good Thanksgiving.

Or you could just make a few sides and then request that everyone who's coming to your Thanksgiving brings a side dish or dessert. That's what my family does every year. Communication is important with this though, you don't want two or more of the same side, or everyone to just bring dessert..

Ginger sauce to pour on the usually awful turkey: - several large knobs of ginger, peeled and finely chopped or if you’re feeling fancy, julienned - 4 green onions, thinly sliced - cup of rice vinegar - cup of Chinese soy sauce - 4-6 tbsp sesame oil - Chinese crushed chili paste to taste I guarantee this will completely make up for any boring turkey taste. Way better than gravy.

Turkey, IMO, is probably one of the dishes that's easiest to get mediocre at Thanksgiving - not bad, mind you, but just a bit dry. This type of turkey goes well the next day in sandwiches, with mayonnaise and cranberry sauce. But the day itself? Yeah, it's hard to get it right. In contrast, I find that Thanksgiving is one of the few times of the year that I can appreciate a well-cooked ham - probably because it's easier (IMO) to do ham well than it is to do turkey well.

I made the green bean casserole for my family thanksgiving today. Turned out great and everyone liked it! I used the chicken stock to deglaze because I didn't want to buy cognac just for one recipe :P Thank you Babish for the excellent recipe and instructions! Oh, one thing, I didn't know the proper method to parboil the green beans so I brought a pot of water to a boil then added the green beans, returned to a boil for two minutes before putting them in a cold water bath. I didn't have any ice, so it was just the water. And, I used a deep casserole dish which seems to have added about 10 minutes to the initial bake time.

It’s a joke because normally when you whisk minimally it’s because there is flour being mixed with other ingredients, in which, when over-mixed, the gluten would activate and make the food tough, and you want to avoid that for fluffy/flaky food such as pancakes or pie dough.

My family's favorite Thanksgiving side is my grandmother's broccoli casserole. She always doubled the recipe and brought at least 2 casserole dishes of it, and it was almost always cleaned. Sadly, my grandmother passed away a few years ago. And she never showed anyone the recipe. So now, every year a couple people bring broccoli casserole, trying new recipes in an attempt to get close to what my grandmother made. No one has ever yet nailed it, but it is still a nice way to remember her. :)

Usually when I see cooking stuff online I'm skeptical because a lot of people have a lot of trouble getting the recipes to look and taste as good as they do in the videos. I've been watching Babish for a while now and have always wanted to try one of his recipes, and finally I had a reason. To made the green bean casserole - something my family tends to be wary of but I adore - and EVERYONE loved it. Seriously, Babish. You've blown my mind. If your sieve looks like a mesh basket on the end of a stick, it is probably not designed to have mashed potatoes pressed through it. The mesh is usually just sort of "pinched" in place by the metal or plastic ring that surrounds it, and if you put too much force on it, it will come loose. So make sure you've got a sieve that's designed for this.

Pressing them through a mesh is too tedious anyway. I cook professionaly and I prefer the potato press over all other equipment to make mashed potatoes. Meshs are for the masochistic and show offs.

@@RobGodMC I got a potato press at Ikea. It's been good to me for mashing mashed potatoes and wringing out shredded potatoes for hash browns. There was one time that I undercooked some diced potatoes and bent my press, but I was able to get it almost as good as new. That was before I learned that when it comes to most potatoes, you're better off cooking them longer than necessary rather than shorter.

I drained them till they were barely coated with milk and I coated the onions in batches, it didn't feel too difficult. it shouldn't be too clumpy, you just had a lot of milk going into the dry. You got it man, drain them longer and coat in batches.@@jonathanb.814

Came here to say this. At the same time though they do get gummy if mixed too aggressively. I know it isn't gluten doing the work, but one time I didn't have a masher and tried to use a food processor to make gnocchi, and it turned into a sticky, stretchy, goopy mess. So even though it isn't gluten, it could be that overmixing can do something similar? What's happening to the potatoes in the food processor there?

My favorite Thanksgiving side is sauteed butternut squash. Melt butter in a saucepan, throw in brown sugar, constantly stir until the sugar is mostly melted, then add your cubed butternut squash. Toss to coat, lower the heat just a bit, cover, and basically steam until a knife passes easily through the squash. If you've done it right, the sugar won't burn.

I'd argue in this technology driven age people are likely going to buy a sous vide because it's impossible to ruin what you cook if you follow directions. The only way you can possibly mess up with it is if you leave something cooking for 10 hours that was meant to cook for 2. Or you cook it at the completely wrong temperature. It's a more fancy slow cooker, something many homes have.

Allllllright, I'm hella skeptical about the mashed potatoes. The point of sous vide with meat is to get the internal temperature up to where you want it to be without overcooking the outside, right? But I have neeeeeeever had that experience with mashed potatoes, nor do I understand how it even could happen. So, what does the sous vide cooking actually do other than make you sound fancy? And how long did it take you to get all that stuff through a fine seive?

Really? Then you're damn good at cooking mashed potatoes then, heh. I'll routinely overcook the outside if I forget to control my simmering, leaving me with potatoes that are falling apart to potato soup and becoming waterlogged on the outside and still a bit firm in the middle leading to potential lumps. With sous vide, you reduce that uneven cooking risk to absolute zero, but you also insulate the potatoes from any outside liquid. The only water that's going in that bag is the butter you put in at the start.

I think the benefits is to get the potato evenly cooked without being watery(that is when the skin burst and the water start going into the potato) But generally, I don't think it make that big of a difference to sous vide them, all is does is save you some time

PoliteTimesplitter how do you cook potatoes? I chop them up, and put them in a boiling pot. After a while I start taking pieces out every couple of minutes and trying to snap them, seeing how they resist. Once they're at the right texture, I take them out, and they're perfectly evenly cooked. Although I should mention, I cut them into much smaller pieces than Babish does - you get this thing that's pretty much a grid of blades you push the potato through, instantly cuts it into French fries. You get a faster cooking time, and more consistency.

PoliteTimesplitter Don't mean to be rude, I suspect you might be using a different cultivar of potato than I am, some of them have pretty different ratios of starches, sugars and water. Either that, or you're not cutting the pieces small enough. And I don't bother with simmering or anything, straight into a boiling pot until it's ready. I'm just used to potatoes being the one food that doesn't really care how I cook it, using sous vide for potatoes seems like using a flamethrower to light a gas hob.

Other people replying are close, but the real answer is a. that the potatoes don't cook in water, so you get a much more "potatoey" flavor, and b. By doing it all sous vide, you're freeing up space on the stove and have very flexible timing, so you're not scrambling to cook every dish at once

@Photobomb Printing I realize this- but in the case of cooking potatoes, at a slow simmer with a cover on the pan, it would hardly matter. Besides, the point is we don't have a sous vide. The closest I can think of is using a crock pot, and that's unreasonably slow.

YES I have never seen anybody else I know use Russet Potatoes for Mashed potatoes!! I always see them using those tiny German potatoes and I don't know WHY. My momma makes the BEST mashed potatoes (and yes, I realise I am HEAVILY biased, but it is TRUE) and uses russet potatoes since she and her family grew them growing up.

Same. Stuffing....cubed sourdough bread, carrots, celery, onion, garlic, mushroom. Dry sage, thyme, rosemary. Butter and turkey fat. Chicken stock and eggs. Salt and pepper. DELICIOUS! I also like adding golden raisins. They soak up all of the savory fats and stock, and it's just this amazing sweet and savory depth to the stuffing.

Dressing goes on a salad. STUFFING is what you're talking about, and it's 1 of the 4 major parts of our Thanksgiving meal nationwide, not just the south. Yes, I just white-knighted Stuffing. Because Stuffing is life.

@@IzzyTheEditor noooo, there is a difference. STUFFING is usually a loose, dry mixture of bread cubes, sausage, and root vegetables. DRESSING is usually a smooth cornmeal batter blended with pureed aromatic veggies and poultry, that is then baked like a casserole. And dressing is the superior of the two, btw.
