@ritaadams83792 жыл бұрын
In the south, we make dressing. Mother's was the best. Day old cornbread cooked in a cast iron skillet - crumbled, not cubed, finely chopped onions and celery cooked with the turkey giblets, loads of sage... seriously, loads, and enough juice from the turkey pan to bring it all together. I can make it but Mother's was so much better.

I made the cornbread stuffing for thanksgiving! It was my own take - 2 boxes of store brand cornbread mix made 2 days ago, sweated out some sweet white onion, added garlic, then about 3tbsp butter till just melted, combined with bread in a large mixing bowl, added freshly chopped rosemary, thyme, and sage and then chicken stock until it seemed wet enough. placed in small skillet with a few squares on top like in the above and did about as stated - 25 min at 350, then removed foil and did another 15ish. Tasted great! So proud of my first time making home-made stuffing!

What we've always down in my family (like 3 generations at least) was use mashed potatoes for stuffing. After cooking the turkey you pull it out and it makes for the most delish mash you've ever had. It's even better as leftovers. It's basically the most popular dish of thanksgiving now and my mom has had to make extra mash for some years now.

Cornbread is crumbly and cakey and has nothing to hold it together, so if it's holding together in the dressing it's too DRY. Some things, like cornbread dressing, are supposed to be soft. Rely on your celery, onion, the crunchy surface, bottom and edges to provide some texture, and just try to appreciate something soft for a change.
@radicaladz2 жыл бұрын
My preferred recipe for seasonal stuffing is a sage and onion/chestnut stuffing with apple, caramelised onion, sausage, chunky croutons, and baked in loaf tins lined with bacon which you interlace/wrap to make a parcel. Sort of a bacon wrapped stuffing meatloaf, if you will, that you can slice and serve on the side. Best part of it is that, whilst it goes great with roast turkey when it's hot out of the oven, it also tastes delicious cold, and goes great with leftovers or post-dinner cheese and crackers on Boxing Day.

As much as I love pretty much all types of stuffing, my nana's is still my favorite. All it was was an extra-large loaf of Wonder Bread that would be toasted via toaster, which was my job as a kid, and broken up, a whole stick of butter and a whole boatload of onions and celery, which would be sautéed until nice and soft. The butter and veggies would be poured over the toast I so carefully made and a bit of salt and pepper would be mixed in. That was it. The majority of it would go into the turkey and any left over would be put into a pan and cooked. It was seriously the best stuffing. Never dry, so flavorful even though we never added anything like stock or herbs to it.

One of the things I've never understood about people saying the stuffing won't come up to temp fast enough- If you stuff it immediately after mixing the browned sausage and hot stock into the bread etc, what temp does it need to come up to? Isn't it already hot, and while it might cool slightly from the coolness of the turkey, it is also then in the oven helping it to at least retain that temp?
@jesst78612 жыл бұрын
The problem is it’s sitting in a raw turkey so it needs to be cooked to 165-170. It’s denser than the turkey so it takes longer to come to that temperature, and by the time the stuffing is fully cooked the turkey is way too dry. It’s not going to maintain whatever temperature it was while you stuffed it in the bird because the inside of the bird is too cold and doesn’t heat up fast enough to maintain the temp.
@fjvarro2 жыл бұрын
@@jesst7861 ah, so the cooked stuffing essentially gets contaminated and brought into the danger zone by the turkey and than needs to be recooked? That makes sense I suppose. Thanks!
