I lost my job during the pandemic and it was a few months before I got a new one. I thankfully had savings and was living in an apartment at the time with low rent, but it was tight. Thanks to you and The Wolfe Pit, I had no problems feeding my wife and myself during those months.

I’m super excited to try the lentil loaf. If you want to try something else with the asparagus and mushrooms, try cream of asparagus soup with mushrooms! All from dollar tree. 3 jars asparagus drained, puréed add 1 cup chicken broth and 1 cup evaporated milk or whole milk. A pinch of nutmeg and 1/2 tsp Cajun seasoning. Bring to a simmer over low heat. Sauté the mushrooms exactly like you did for the crostini. Set half aside to garnish the soup bowls. Mix in half of the mushrooms and top with the remaining half. Made two large delicious bowls of soup! I also topped with a little grated parm I had in the fridge

Never have had asparagus from Dollar Tree.I can't eat lentils .There is something about them, had a slight allergic reaction.I would follow the recipe but use beans.

Yes, many people live in "food deserts" and if I did not have a car, I would be in one myself. We only have the Dollar General within walking distance. Absolutely no other grocery stores. Many areas are becoming like this. There is also an issue of being able to actually walk there if there were one close enough as it is dangerous in many of these places where the local governments are too cheap to put in a safe walkway/side walk. That said, well done to you for yet another amazing meal creation from those items. Merry Christmas and Happy New Year to my favorite YT girl!

I just love the Farmer John 8oz rolls of sausage from the Dollar Tree! It cooks up as good as any of the big name brands and is just enough for 2 - 4 servings of sausage gravy for biscuits. My Dollar Tree had 4oz Harry & David gift basket size coffees this year...four packages equals 1lb, so at a $1.25, that's only $5 for a pound of really good coffee. They had several flavors, but I liked the breakfast blend best.

And, thanks to your teaching previously, I have some saved sausage and bacon drippings. You can make a great chili with lentils instead of meat. There's a recipe for an easy Indian curry using lentils, it's really good over rice. I forget the Indian name of the dish.
