Starting the New Years right learning here! I love leftovers cause I just freeze em now its my quick cheap way to meal prep but yes I agree its power dependent unless you have a generator.

Our little solar generator (around $900) can run the freezer off and on for a couple days before needing a charge up from the panels. The one I use seems to be out of business (think they had a supply chain issue). But Jackery is a great brand too and if I get another would consider them

Yeah the only way to have a root cellar here is to build one then mound the dirt around it. Gotta put vigorous rooted grasses on it to hold the dirt on it to fight the erosion monster

Your digging down and hitting water. But not making a spring house? Smh. You can store foods frozen outdoors well into the summer in northern areas. It's called an ice house. Find an area where the sun don't shine. Like a north wall or northern slope. Shovel snow into hole on northern reach and cover with vegetation. We use our flowing point well to keep stuff cool in summer. Another way to freeze things is bury it in sand. Dump gas on the sand and light on fire. The stuff buried in the sand will have ice crystals in it. Potatoes off gassing in root cellar, they gas can be deadly within 10 minutes without proper vents. You need vents in root cellar for lighter than air gases and heavier than air gasses.
