Man, when you reached I got up to pause the video and make some food and stuff, and I noticed the video was only at the half point and I thought to myself "no way he spends 3 hours on gwyn, those are extra bosses". On one hand, being completely honest, I feel sorry for you mate. No one deserves the suffering you endured to finish this run. On the other, kudos for sticking it out.

About the floor breaking, I can't speak to the asylum demon needing to be dead but I can say with absolute certainty (in remastered version at least) that you can get the floor to fall but you cannot attack the stray demon from up top.

The toxic effect that you get from throwing the poop does less damage than the normal toxic effect which includes toxic the poop gives enemies. it also prevents you from getting the normal toxic effect

Watching the beginning of this while taking a shit just felt poetic And the reason the dung pie lasts for 10 whole minutes, is that it's a defense item. Not an offensive one. There are different levels of toxic in dark souls one, the dung pie is the lowest form of toxic dps. However, the blow dart guys have the highest toxic dps. But, you can only become toxic from one source at a time. So you can toxic yourself with the dung pies, in order to become immune from the blow dart guys. Very clever use of all item, that actually makes it kinda useful outside of it's limited offensive ability
