Yes, combining both systems i.e. allows for prolonged slow build-up of pressure if you adjust the Idro-Matic to start where the dual ends. Or use Idro-Matic for declining pressure at end of extraction by switching to centre position of lever.

The three groups are adjusted to 3 extreme setings. Each offering a different start & end-infusion pressure. From these three you’ll choose the best tasting, then proceed fine-tuning further.

@@Dwaoh Sorry to read that! Each setting offers a different pre-infusion, the effect of this pre-infusion on the taste of your espresso depends on a lot of other parameters. It depends on what coffee you use, the grinding settings, filter basket and your personal taste. These parameters are up to the barista to decide, the Idro-Matic is only the tool that empowers this search and will certainly get you a higher yield in the cup. @@Dwaoh Your question might be possible to answer for the specific coffee used in the clip, but I don't think it's possible to generalise - the answer is probably to set it in the middle position, then grind for the relevant target (e.g. 18 grams, 36 grams out, 30 seconds total brewing time), and after you're happy with that, adjust the idromatic to see what changes help with the taste.

This video doesn’t show how the idromatic works in relation to the pre infusion phase and how it affects the taste and extraction of the espresso, In short please make better videos with more detailed workings of your machines so that anyone who is interested in your machines can know whats he’s getting.
