Similar kind of story when we removed a wall. The cooker wire was embedded diagonally! We drilled right through it, but thankfully I'd already replaced the consumer unit with RCBOs so nobody was hurt. Keep up the pace it sounds like you're making excellent progress! Also that cable looks lovely
