It's fun to watch this and think of Chef Francotelli from Victoria creating this dish! And that is certainly a beautiful piece of meat! Definitely still the same in comparative cost. It must smell delicious roasting on the spit. Can you imagine those kitchens while everything was going at full force? It must have smelled wonderful--how did they not all want to sneak a taste??

Thanks to the food adulteration that was common during the Victorian era, the flour contained plaster, sawdust, floor sweepings, and (as a preservative) a trace of arsenic.

Bread will only mold if there's enough moisture present. Think of drying bread for croutons or stuffing. And at that level of aristocracy, I doubt the flour would have been cut with any additives, including arsenic, if purchased from reputable miller. Which I'm sure a Great House such as Perhyn could afford to do.

While queen Victoria was busy stuffing her mouth, her people were starving to death. And if they weren’t starving to death they were working in one of the 700 work houses! let’s see what were the age of the children 8, 9 years old working in the Mills : so while she is eating like a queen there’s people out there is that the only meal they have is porridge! I do enjoy watching this but still….

16:30 - I think he's maybe thinking of barbecue as in just "grilling out" and is forgetting/not aware that genuine "barbecue" uses just as if not more sophisticated techniques and quality ingredients. -- I don't know how it is/what they know about it in the UK but even in the U.S. when mentioning "BBQ" you've got to be VERY specific about where you are on a large spectrum that goes from hot dogs and hamburgers in the backyard on a charcoal webber through slow-cookers/marinades/smokers to buried coal pig roasts, actual "pit" BBQs, and thenow-centuries-long regional refinement of many different styles (...and some of the most broad and formative BBQ practices come from colonial slaves with French and English owners and there are enough similarities/shared influences it's not unreasonable to argue that barbecue is EXACTLY what they are doing in this episode).
