Grandpa Gohan found out early on that Goku could turn into an Oozaru at the full moon, so he tried to make sure Goku didn't go out on those nights by claiming that a scary monster came out in the full moon and would get him. However, one night, Goku went out to pee, saw the moon and turned into an Oozaru. He turned back eventually, but ended up killing Grandpa Gohan in the process. Goku didn't fully understand what happened at the time, so he just thought the monster got him. The sad thing is, Goku didn't figure this out until he saw Vegeta turn into an Oozaru decades later. He pre-emptively declared that he would apologise to Grandpa Gohan if he met him in the Otherworld.

I thought storywise, the Trunks and Bardock DLC are exactly what you should do when retelling the story. Expand upon it and just make it better. The Trunks vs Androids fight was infinitely more satisfying than in the show for example. Same with this DLC. And most importantly, they kept Soldi State Scouter...

This Bardock episode was originally made as an anime special which typically aren't canon. But Toriyama liked the character so much that when Frieza and Goku face off, Frieza for a single panel in the manga remembers Bardock's face. Which lead to a lot of people thinking this whole story was part of the canon but then Toriyama years later made a manga special chapter called Dragon Ball Minus and he redesigned and retconned Bardock's story to make Goku more like Superman

Grandpa Gohan was accidentally killed by Goku off-screen before the start of OG Dragon Ball. Goku stared at the full moon and transformed into a Great Ape and crushed Gohan while transformed, and Goku never realized it, assuming that Gohan was sealed into the Four-Star Dragon Ball (the reason why Goku has a special attachment to that one), and Goku only learned the truth of what happened during his fight with Vegeta when Vegeta himself transformed into a Great Ape, and Goku apologized to Grandpa Gohan for killing him.

The reason why it was laughable that Frieza would wipe out the Saiyans is due to the fact that 99% of the entire Saiyan population was active in the Frieza Force. As a result, the Saiyans made up 51% of the Frieza Forces' Total Effective Military Strength. If Frieza wasn't as powerful and ruthless as he was, the loss of the Saiyans would have devastated Frieza's powerbase. It should be noted that between the Dragon Ball Minus manga and Dragon Ball Super: Brolly, Bardock was canonized.
