I’m so proud of this dude. This is my fellow NY’er. He works his ass off, he’s proud of his product, he makes it his own way. This is who I cheer for. The little guy, fighting against the big guy. Here in Texas, you’ll find different kinds of Texas style BBQ depending on the creator’s background. Obviously traditional Texas style but also Mexican Texas style, Jamaican Texas style, Dominican Texas style, etc. He’s definitely doing a good job with his style of Texas BBQ.

Without actually meeting him I know he's the real deal. His story is the same I always here from the great pitmaster's, humble, don't call themselves pitmaster. Even slightly embarrassed when others do call him a pitmaster. His ingredients, techniques and how about that nice 500 gallon offset smoker, very nice. And yes,putting in the love. For those who don't know, he needs to feed that beast of a smoker about once a hour one or two "splits" of firewood through the entire cook/night so the meat is just right. Well done sir, and well done Munchies. Everyone have a great day 🌤

The beauty of American BBQ is how there are many styles to doctoring up your meat, so it makes me happy to see good Texas style BBQ that has a hint of Dominican flair to it in NYC. Being a purist can limit you from the possibilities that a style of cooking can give you.

I live in Texas. When my grandfather was alive and barbequed he didn't use only salt and pepper. He used other spices like cheyenne, paprika, Worcestershire and sometimes homemade hot sauce.

Yeah I know. Literally every pitmaster I've known from the South NEVER uses just salt and pepper. It's always dried chilies, garlic, paprika, ect;

As a South Texan: That boy is gettin it. You can see his cookery is spot on. Telltale signs: how supple is the fat; does the meat glisten; does a brisket fold over into itself when held upright. He checks all them boxes. 👍 *_TEXAS APPROVED_* Edit, PSA: All you newbies getting your grill stripes-- brine, brine, brine. Put your brisket in a cooler with 2-3 gallons of brining liquid and a 20 pound bag of ice dumped on top. Leave it for 24-36 hours. If you plan to smoke turkey ... BRINE IT. Trust me on that.

I Don't understand why your West Indian Heritage makes you want to do Texas barbecue but your Southern FBA Heritage didn't. This dude is doing BARBECUE. Jerk chicken is a Caribbean form of BARBECUE and we have many regional styles here. He just picked Texas because most NYC residents are immigrants so it's gimmicky. That's probably more Mississippi Style or Alabama. I hope you do start a Spot it might give you more PRIDE in your America Lineage. I grew up in Austin... worked is a hole in the wall BBQ joint about 1980. Brisket, butts, chicken and sausage. Thumbs up buddy.. you got the spirit. Stay with it. 40 yrs later people still tell me how good the meat is. Keep doing what you love.👍

Looks great! I admire someone that uses the traditional method but create their own flavors. He’s learned the only great way to make brisket is using a stick burner not a pellet smoker. Good on you sir! One day I’ll visit NY and try out your brisket. 🤛🏼 from TX!

This looks fire. Keep doing your thing. I’ve never ever heard of just salt and pepper on bbq in Texas tho lol. It’s usually a fire dry rub mixed with several spices.

It's interesting that he's really advertising his turkey, because I once heard that you can judge a great BBQ place by their smoked turkey. This place must be legit!

Love this guy!! He pushed through and set his vision! Incredible strength to break the normal for what seemed like his path - he is someone to respect, and I know he will continue to do great things with his current attitude! I hope I get the opportunity to visit his business and meet him! Glad that he is posted here otherwise who would know?
