The guy teaching Carmy how to debone the chicken is Thomas Keller, one of the best chefs in the world. He owns the French Laundry in Napa and another place called Ad Hoc. And most of the people sitting around the table with Syd and Carmy were all chefs too, including Christina Tosi.

I didn’t know who he was but figured that the man showing him how to debone the chicken was a real chef by the way he played the scene. I love that they did that.

i think it's important that carmy didn't get that moment of catharsis with his old boss. its so real. no matter how badly you want it or try to make it happen you can't just talk your abuser into understanding the damage they've done. they just don't care. and it kills you. abusers exist in a way they think is right. they think 'this is what love is this how i help' or at least thats what they tell themselves to excuse their actions

So this! I found out you never get that "ah ha!" moment when you confront someone. But I was lucky to realise how pointless it was to carry all that anger at someone who was never worth my time in the first place.

I loved how all the people around the table during the dinner conversation were real chefs, from Chicago mostly. And the shade towards saltbae during the afterparty.

Carmy is punishing himself because of his treatment of Claire. It’s not just the one Chef or any of the Chefs that is his problem, it’s his family dynamics that created the negative mindset that makes the obnoxious Chef familiar. He needs lots of help outside of Alanon to help him. He’s introverted, not like Mikey, not like Richie, and that’s ok - he needs to be ok with his unique personality and his family and friends need to learn how to respect him for who he is. IMO.

I swear, if they bring the smudge saga around to the third season I'm gonna be so impressed. I just get bad vibes from Chef Adam in general but a boss that yells like he did about a smudge in Forks is not okay -- ever, at any level. There are better ways to handle it. Now, we get this exchange between him and Luca about him having a reputation for smudging..... IDK, I could be wrong. But, a boss that blames others for their mistakes is not where I want Sydney to end up -- I hope Carm gets his shit together. Also, correct me if I'm wrong but did Sydney ever open the contract --- does she even know the terms of her share of the Bear?

I think that f-bomb from Carmie was more like a "eureka" like the penny has dropped that what he's doing now isn't really working. I hope, or else Sydney will inherit his trauma if she stays.

I took the ending as a positive for the restaurant but Carmen realising that now the heat is really turned up to maintain success. He was getting comfortable with the idea that if it failed he would step away, with the good review he has to double down

As a chef I can’t tell you the amount of times I’ve wanted to tear my old chefs apart, but the worst part is that they were right. Despite all the stress, sleepless nights, ulcers, screaming, cuts, burns, and fights, they made me better. That’s the price for perfection: your whole life.

when Carmy is looking at all the pictures there's a picture of Bradley Coopers character Adam Jones from the movie "Burnt" where he plays troubled chef striving to receive a Michelin star. I'm assuming it means they both exist in the same universe.

But his wish bone wasn't as clean as Keller's, indicating Carmy was rushing and was still on his journey to greatness. Plus Keller was teaching and telling the story of the Pope's nose whilst he was deboning, which would take away from his overall efficiency.

@@kyleyost1163 You are absolutely correct. Still, it stands that Carmy was sloppy at first, he did it fast, but didn't do it quite right, the way Chef Keller showed. And it's something that he kept doing as he moved on, he forgot the most important thing: slow is smooth, and smooth is fast.

I'm thinking in season 4 (which hopefully will be the last season. Best not to drag it out) Carmy will follow in Micheal's path and self delete. This season had a big thing on legacy, and generational trauma (both through his chaotic family and some of the people he's worked for) is one hell of a strong legacy.

The first two seasons were some of the best television in recent years. This season was a well-acted, well-filmed waste of time. It’s a prime example of “all sizzle and no steak.” The plot wasn’t advanced at all and none of the main characters developed even a little (with the exception of Sugar having the baby). You could literally skip this season, read a 30 second summary, and be all caught up with no issues. The best episode was Tina’s. It was very well done but it was a bottle episode that told us nothing we needed to know for the characters to develop or advance the plot. If I had to hazard a guess as to what happened, I think they wanted to wrap everything up this season. But then Disney bought Hulu and offered an absurd amount of money for another season. As a result, they put all plot threads on hold. Just my theory. Also, whoever told them that we needed to waste more valuable screen time with Faks should be fired immediately. That was such a bad decision.

They are taking risks & I applaud them. Season 1 was so good they could have just dished out more of the same, but S2 is very different from S1 & S3 is very different from S2. I love them all for different reasons. One of the issues with this season is that if feels a lot like "The Empire Strikes Back", ending on a cliffhanger. So I'll hold off final judgement until the end of S4.

@@SoonLeeNZ You don’t reserve judgement on a season until another comes along. If you have to do that, that’s already a bad sign. We can and should judge this season on its own merit. You can do that by asking a few questions: How has the plot advanced from the beginning of the season compared to the end? Were there any new plot threads added this season? Were any plot threads advanced or resolved? Have any of the main players developed or otherwise changed in any way this season? If the answer is pretty much “no” to all of those questions, I’d say that’s a waste of time, particularly with how talented this crew is.

@@spbynum YMMV but I loved this season. It's building the tension, "Will Sydney sign the contract or take the other offer?" "Will the restaurant review be good?" "Will Jimmy pull the plug on The Bear" It's the waiting for the other shoe to drop (callback to last season) that we're being put through this season, mainly because Carmy (despite the confrontation with his old Chef) is still stuck. But Marcus has renewed purpose, Tina is getting confident enough to try to come up with her own dishes. The character development has been in characters other than Carmy.

Season 3's writing is quite different to previous 2 and is very fan-servicy with the Faks. They tried too hard to give people the comedic aspects they liked in season 1/2 and went too far to the point where it was just grating and took away from the drama, also the plot didn't really move forward at all, too many pointless flashbacks and dragged out scenes. Definitely a step down in quality from the first two seasons. Doesn't mean I didn't enjoy it or it wasn't good, but you can tell they thought too much of what the audience wanted which never is a good idea, that's why it's better to just ignore what people say and stick to your gut. Hopefully season 4 they dial it back a bit.
