What caused the fire?

Electrical fault. Real tragedy.

It was arson. Some work was being done on the cathedral, but no workmen/builders were on site that day - and yet somehow the roof went up in flames. The media rushed to report it as an 'electrical fault' while the building was still burning. In 2020, investigators suspected "the fire to have been started by either a cigarette or a short circuit in the electrical system". Absolutely no witnesses, of course - because apparently no one was there. The whole thing is dodgy as Hell. Especially when you consider how frequently churches in France are targeted by terrorists.
