@@jonpalmer925 no the scraps are not just fat its just a bunch of the chewy sinew and some meat and fat. you cant really do that with these scraps but you can with brisket trimmings which are mainly just fat and nothing else

I need to get myself a sous vide. Just don't know where to put it, with the air fryer, instant pot, bread machine, and everything else taking up all the counter and cabinet space. Sous vide circulator is cheap, mine ~$80. That and a plastic tub live on top of a garage cabinet, until needed. And once you cook pork loin @140F, you'll NEVER go back. 140F safe? I had the pleasure of going to Leroy and Lewis last week and was absolutely blown away! The beef cheeks were better than I ever could have imagined. It was definitely a highlight of my BBQ experience. I wasn’t even mad that there wasn’t brisket on a weekday after eating the beef cheeks 😂

I went ahead and just cooked up a couple of those packs a couple weeks ago, untrimmed, L&R style doing the tallow confit, complete with hand mixer to shred it. I have to say it worked pretty well. I've made barbacoa a number of times on the smoker, but I think that method definitely came out better!

This looks the perfect cook for my Hasty Bake grill. I could do the first part low and slow to get smoke ring then raise the charcoal bed, remove the heat deflector and direct grill. Then finish off in hot bath. Thanks for the great cook and expert meat trimming.

I just bought 4.5 pounds of beef cheeks at Sam's Club at 3.98/lb. After trimming I had 2 cheeks weighing in at 1.25 pounds. Net cost per pound $14. Yikes! Plan to cook tomorrow but that's too expensive.

Certified Mexican here. Don’t scrap nothing until it’s all rendered down. Get some good smoke flavor on the meat and finish on low in a crock pot till everything dissolves like butter. Usually takes all day or night. Yea you might have some chewy pieces in there but guess what, collagen and gristly meat are good for ya homies.
