I also appreciate that she uses grams instead of cups (she states both) it makes conversions and doubling or halting things easier. Also I’ve learnt the best recipes use weights not cups for measurements. Dunno why.

I followed the recipe without wine and used our pressure cooker instead for about 30 minutes under low pressure, then simmering for 45 minutes. Family love it.

If you don't like red wine use Balsamic vinegar. Its all about the acidity just use a quarter cup or a good splash or do it by spoon till it tastes right.

Muy buena receta....asi es como se hace el "ragu di carne classico" Emiliano (Emilia-Romagna), sirviendose con pastas finas, tipo spaghetti (yo utilizo aprox. una cucharada sopera colmadita de manteca de cerdo en vez de aceite de oliva, ya que la manteca le da un punto de grasa y jugosidad muy bueno al guiso...es lo que se utilizaba originalmente, pues el aceite de oliva se incorporo mucho despues).
