Today is baking time and I am going to make my favorite cake. It’s the Brazilian carrot cake with brigadeiro on top of course.
Here are the ingredients:
For the cake:
4 eggs in room temperature
3 medium carrots
3/4 cup of oil
2 1/2 cup of all purpose flour
2 cups of sugar
1 teaspoon of baking powder
For the brigadeiro on top:
1 sweetened condensed milk
1 thick cream
200g of milk chocolate
First I will cook the carrots a bit and let it cool down. Then I will remove the skin and blend it with the oil. Let it separated.
Preheat the oven in 180° Celsius.
Now I will add in a bowl the eggs, sugar, carrots with oil and mix it for 5min.
Add the flour little by little and keep mixing it. Once it’s all well mixed, turn off the mixer and add the baking powder mixing carefully with a spoon.
Add it to the cake pan and let it bake in the oven for approximately 40min.
While the cake is baking we will do the topping.
In a pot add the sweetened condensed milk, the thick cream and the chocolate. Turn on the heat in medium and start mixing it.
We want the topping to be creamy so we will cook for approximately 10min. Once it starts to get thicker we can turn it off and let it cool down.
We can check the cake with the help of a toothpick, if it comes out without anything on it, it means that it is ready.
Turn off the heat, remove the cake and let it cool down a bit to remove from the cake pan.
Now we will remove from the cake pan, place it in a plate and add the brigadeiro on top.
I love this carrot cake because you can’t feel the pieces of carrots, differently from the ones you can see here in North America.
