BOLO DE CENOURA | CARROT CAKE | Brazilian Kitchen

Welcome to Brazilian Kitchen! Today we have a long time favorite, Brazilian Carrot Cake! I grew up eating this cake cause it's easy to do and very delicious, and to top is off: chocolate covering!
I know what you're thinking: it doesn't get any better than this!
And you're absolutely right, it doesn't!
You'll need:
FOR THE BATTER:
270g | 9,5oz of carrots
240g | 8,4 of flour
200ml | 9,7fl oz of oil
8g | 0,3oz of baking powder
3 eggs
360g | 12,7oz of sugar
CHOCOLATE COVERING:
280g | 10oz of Chocolate chips
1 can of table cream

Has anyone made this with coconut oil? I try to avoid seed oils.
