This sounds delicious! Incidentally, this is very similar to an Indian dessert called shahi tukda, which has a base of fried bread soaked in syrup, covered with reduced milk and pistachios.

How much double cream do you need for this recipe? Also, can I skip the bread pieces?

One packet of double cream. You can but, it would be just normal pudding. You get all of the sweet flavour from the bread actually. You can skip the bread and add more sugar to the pudding if you'd like to.
