Ingredients:
2 Eggs
1/4 lb. cooked pulled Beef Baracoa
6 oz can black beans, drained
2 flour tortillas
1/4 cup chopped fresh Pico de Gallo
1 cup shredded cheese, Jack, Cheddar
Directions:
In a large sauté pan add the eggs and scramble, when done set aside, wipe pan clean, combine the beef and drained black beans, simmer your beef mix for around 5 minutes.
Start filling your tortilla by lining up eggs, and beef/beans onto 1/3 of the tortilla. Be sure to add any toppings you like, fresh Pico de Gallo, and cheese.
Roll the tortilla onto the filling then fold over the ends of the burrito to seal them so that the filling doesn’t fall out and roll up.
Lightly coat your fry pan with oil over medium heat. When the pan is hot, add the burritos, seam side down. Cook the burrito until the bottom of the burritos are golden brown which is about 2 to 3 minutes. Flip the burritos over, continue cooking until golden another 2 to 3 minutes.
