I tried getting some together but next time I’m going to weigh everything so I can offer gram measurements. I tried looking into conversions but each source didn’t match. Would hate to provide the wrong info. Once I make again I’ll be sure to update you. I have a blueberry maple version of this I’ll have to make soon. I could break down what I made in tablespoon measurements if that works.

When Covid first happened I made this sausage as well as my blueberry maple one for about 20 of my friends and family and it was widely loved. I had people asking for 10 pounds at a time. Don’t knock it until you try it!

Also some meat markets can grind the meat for you how you like. Most know the chili plate or large grind plate reference but really regular ground pork works just as good or ground one time for a more course texture.

You can use a Kitchen Aid grinder attachment if you have a stand mixer already. Or just buy a stand mixer with a grinder attachment, they cost about the same, but you get a TON of extra versatility with the stand mixer.
