Goldburger started as a burger pop-up in a backyard, but it recently won LA Food and Wine’s best burger for 2019. They smash onions into a crispy patty and load it up on a soft white bun dripping with American cheese. It’s simple and absolutely delicious and people are lining up and waiting for a chance to try the burger. They sell 500 cheeseburgers every weekend. The address of the pop-up is in the Silver Lake neighborhood of Los Angeles at 3319 Sunset Boulevard. It’s held every Saturday and Sunday for a limited time only.

It's a smashburger from George Motz's Burger Scholar videos. Being in Silverlake, it's got to be grassfed (yet still use processed cheese slices?) and expensive for a cheeseburger you can make at home. This is straight up what's called an Oklahoma onion burger. Ball of meat, smashed on the grill with very thin onions and topped with American cheese. His contribution to the onion burger is that he's smashing the onions into the meat which is a neat trick. But that's exactly what he's serving, an Oklahoma onion burger, and making sure to use a really tasteful ground beef and keeping his grill very hot so he can get a good crust on the meat quickly while leaving the inside medium pink. Now I owned a burger joint in a town full of losers and was throwing pearls before swine serving black angus burgers at crappy USDA choice prices (because I refused to serve tasteless meat) cooked medium on a $2 sourdough bun and people would freak out over the pink meat accusing me of being irresponsible passing on dangerous food pathogens, etc. You can have the restaurant business, folks, because people suck. They really just want (and deserve) garbage on a plate for a cheap price. They absolutely REFUSE to allow a restaurant to make a profit off of them because THEY ARE SPECIAL AND YOU SHOULD BE HAPPY THEY ARE ALLOWING YOU TO COOK FOR THEM. Most people just don't understand how expensive ingredients are let alone how much you have to spend on labor and rent and utilities, etc. etc. etc. They want cheap garbage flavored with lots of salt and corn syrup and cooked by exploited illegal aliens who get paid in flour and fed boiled shoe leather and don't want to pay more than for $5 for it with a free drink and free chips and salsa and your cashier was mean to me because they didn't smile and I'm never coming back unless I get to eat free so I know that you love me.
