Ingredients:
• 2 medium potatoes, peeled and grated
• 1 medium onion, finely chopped
• 1 cooked pork sausages, chopped into small pieces
• 100g grated cheese (you can use both grated cheese and cheese slices)
• 3 large eggs
• Salt and pepper, to taste
Instructions:
1. Preheat the Oven: Preheat your oven to 200°C (400°F). Line a muffin tin with cupcake liners or grease it lightly.
2. Prepare the Potato Mixture:
• Grate the potatoes and squeeze out any excess moisture using a clean kitchen towel or paper towel.
• In a bowl, combine the grated potatoes, chopped onion, and sausage pieces.
• Add half of the grated cheese to the mixture and mix well.
3. Add the Eggs:
• Beat the eggs in a separate bowl and pour them into the potato mixture. Stir until everything is well combined. Season with salt and pepper according to your taste.
4. Fill the Muffin Tin:
• Spoon the mixture into the prepared muffin tin, filling each cup about two-thirds full.
• Sprinkle the remaining grated cheese on top of each muffin for a crispy, golden finish.
5. Bake:
• Place the muffin tin in the preheated oven and bake for about 15-25 minutes or until the cupcakes are golden brown and the tops are crispy. You can check doneness by inserting a toothpick into the center; it should come out clean.
6. Cool and Serve:
• Allow the cupcakes to cool slightly before removing them from the tin. Serve warm as a snack or part of a meal.
