THE BEST CHICAGO PUBLIC SCHOOL LUNCHROOM BUTTER COOKIES | BUTTERY & DELICIOUS | QUICK, SIMPLE & EASY

Hey y'all this is a childhood school favorite I'll never forget. If you grew up in Chicago and went to public school, you know exactly what I mean! If you didn't, try this recipe and get a taste of what we were pleasured to enjoy'.
Ingredients
2 Cups Flour
2 Sticks Salted Butter (Softened)
3/4 Cup Sugar
1 1/2 Tsp Vanilla Extract
Preheat oven at 350
Cream butter and sugar until light and fluffy: add Vanilla Extract, gradually add in flour. Combine dough into one ball. Scoop or spoon dough into balls and place on cookie sheet; slightly flatten and press with first three fingers. Place in oven and cook for 12-15 minutes. Cool and enjoy this Ole School Memory!
Yields about 1 1/2 dozen. Double ingredients for more cookies

I was there in 1969 in Kindergarten. The Sloppy Joes, Spaghetti days along with the Cookie was immaculate. The Chocolate milk added, we show grew up in a Good Time

Chicago! ❤️ A special place in my heart for Chicago "elements". I was born there and just before I turned 5, my Dad moved us to Tennessee, his home area. It was a culture shock and prolonged homesick feelings, I still get them some 40 + years later. Parents owned a Restaurant on Belmont and Western Avenues, across from "Riverview" I went there all the time. Do it like you do a old fashion pound cake, equal part butter, sugar and flour. add a little vanilla and a tench of salt. If it's not holding a shape add a little more butter.

Hi Sylvia Jackson, I've never frozen then before, but I have heard of people freezing cakes, so it might work for cookies. If I were you, I'd make a batch and freeze them to see how they turn out after defrosting. Good luck either way!

Sugar cookie dough freezes well just make sure to leave it out to room temperature lightly flower your surface before rolling out

Correct name is Scottish Shortbread Butter Cookies. Recipe should be 1/4 cup of sugar per cup of flour. Also, one tsp of extract per cup of flour. Southerners and African American generally add additional sugar to cakes, cookies, pies, breads, ice tea, kool-aid, etc.... My eldest 102 year-old aunt was taught this recipe from her Scottish/Irish grandmother when she was young in the 1930s. Walker, an imported Scottish brand, still uses the original recipe if you would like to purchase.
