Beautiful Blue enamel skillet. Of course you had to make that bouquet garni perfect and beautiful. That's very interesting the way you are making the parfait with the livers. I'ts nice and pink. That's a good technique. Loved this Chef.....Wonderful. 👍🏻5

Richard, I love me some classic French cooking and you cannot get more classic than chicken liver parfait. Your recipe is bang on as well, I was watching and nodding like an idiot, cant say how nice it is to see a parfait made so well mate. You still have some really good habits like tin foil in your oven, I'm far too lazy for that nowadays. I think the pear chutney and ciabatta croutons were a perfect marriage, really fantastic video Richard, thanks

Thanks Matt it’s one of my favourites and we always have it at Xmas, the chutney is a recipe that I pinched from la Gavaroche when I was doing a stage there back in the 90’s, i added star anise but it’s a cracking recipe, thanks for stopping by and the feedback, especially from a fellow chef

The loaf tin in the video has 1/2 lb on it, I filled it with water which was 380ml, serves 4-6, hope that helps
