This is a crispy and delicious Chicken Schnitzel that's perfect for any meal. Let me show you how to achieve that golden, crunchy coating with a quick flash fry and bake method.
Ingredients:
1 kg chicken breast fillets, thinly sliced
1/2 cup flour
2 cups dry breadcrumbs
1/2 cup parsley, finely chopped
2 tsp sumac
1 tsp onion flakes
1 tsp garlic powder
Salt & pepper, to taste
1 egg
1 cup milk
Method:
Place the chicken slices in a large snap-lock bag with the flour. Seal the bag and toss to coat the chicken evenly with flour.
In a bowl, mix together the breadcrumbs, parsley, sumac, onion flakes, garlic powder, salt, and pepper.
In another bowl, whisk together the egg and milk.
Bread the Chicken:
Remove excess flour from each chicken slice. Dip each piece into the egg wash, then coat with the crumb mixture. Repeat for all chicken slices.
Heat oil to 190°C in a pan. Fry the chicken slices for about 2 minutes, or until they just start to turn light golden. This step helps seal the coating.
Place the fried chicken on an oven-proof rack set over a sheet tray to keep it crispy. Bake in a preheated oven at 200°C for 10 minutes.
Note: For a healthier option, you can skip the frying and bake the chicken directly. Flash frying followed by baking gives a crispy coating without overcooking the chicken.
