Hi Olga! This recipe is amazing. My husband had a birthday this weekend and he requested chocolate cake. I didn't want to use any of those processed mixes so I planned ahead and got everything I needed. I made the truffle cake you have in another video using this recipe for the sponges. Unfortunately I accidentally damaged the one sponge so the cake didn't turn as beautiful as yours. Though my husband's comment was : it's so decadent. I have never heard him saying that about other cakes I made in the past using premade mixes. Our kids loved it as well. Thank you so much for this recipe!

Hi olga! I tried making your recipe using a kitchen scale because im a pastry vhef myself but the cake didnt turn our as light and airy as yours. Infact the batter was very dense and dough like. It had great structure but it was very dense. Any tips for me?

I've made it .when i take it out of the oven Something smell is not good i dont know why.But I soon discovered the scent. The quinoa scent was little strong.may be I did add a little less vanilla extract?But The taste is delicious, just i dont like that smell.I'll try another recipe. i like this channel and thank you so much for the recipe.

Thank you for your feedback :) Try to make your own sprouted quinoa flour, it will smell different :) However, I made this sponge for all my wedding cakes and no one guest ever told to my clients something bad about the smell. This sponge was tried by 1000+ of my customers. And yes, you can reduce the quantity of vanilla extract. Thank you for making cakes by my recipes :) Chocolate Orange Bee cake and Truffle Cake have other recipes of chocolate sponges but they're heavier. This one is the fluffiest on this channel.

hI ! I loved your video and tried to do it but it didn't come fluffy like yours. One question I have is how much tapioca flour? in the list above it says "1/4 cup + 1/8 cup / 60 gr tapioca flour" ... is it 1/4 + 1/8 cups? and 2) question is can I replace quinoa flour with almond flour?

Hello, for the same result, please use kitchen scale. The world of professional chefs use grams, so I’m using only the scale for all measurements. Cups are very appropriate weight and can give you really different result. And unfortunately no, almond flour is not the same as quinoa flour. In this recipe, there is no substitutions for quinoa flour. You can check the recipe for chocolate sponge in Chocolate Orange Bee cake. But that sponge is more heavy, similar to brownie.

Порошок для выпечки это то же самое, что обыкновенный разрехлитель для выпечки. В отличие от соды, сожержит еще пару компонентов, кислоту и вещество которое соединяет эти два элемента. В данном рецепте истользуется для того, чтобы помочь соде погаситься, так как в рецепте больше нет продуктов с компанентами содержащими кислоту. Ольга видать не очень потчует своих подрисчиков ответами. Ну да ладно.

Yes, instead of all flowers, use the same amount of regular all purpose flour.

Use any mixer that you have. We don’t whipped the batter, we just need to mix it. So, the power of your blender doesn’t matter here. Good luck,

Hi olga, i have read your answer related to baking soda and baking powder. Is there a substitution for baking powder and baking soda? Because it is a lil bit hard to find natural baking soda and baking powder in my country

Hi Tanya, I am sorry, I never tested this recipe without these ingredients. I think you can buy them from iHerb.com. They deliver worldwide and you will use just a little amount of soda and baking powder. so, you will use them for a long time.

I was wanting to know why the cake must be covered with plastic wrap as I would like to avoid using plastic on my warm cake for obvious health reasons. Will it dry out so quickly if left out for slightly longer to cool???

If you don't want to use baking powder and soda for your kids, this is your right as a mom. Without these ingredients, vegan gluten-free sponges will not raise. And the amount is so low in the recipe. If you really super healthy conscious mom who never give even 0.01% of non-whole foods, just avoid such recipes. But you have plenty options of raw cakes, all of them without these ingredients. Check my strawberry cheesecake or Coffee brownie (avoid coffee and add carob or cacao powder for kid-friendly option).

I am sorry, I can't help you here. I never did this recipe as a vanilla cake. You can try but I can't guarantee that it will be fluffy, moist and delicious. Try with 50% of recipe.

Unfortunately, no, The only one substitution for quinoa flour is white flour. Check the recipe if chocolate sponges in my Truffle Cake. It doesn't have quinoa flour.

It’s hard to find substitution. Quinoa flour is very similar to white flour but gluten-free and whole food. No one grain /seed has so much protein like quinoa (all other GF flowers are mostly carbs but not protein products which is important!). You can use whole wheat flour (but it will be with gluten), or please try another recipe with GF mix (I don’t use quinoa flour there). It's two cakes on my channel: - Bee Chocolate Orange Cake - Truffle Cake (both have the same recipes). But these two sponges are very different. Quinoa makes sponges fluffy and light. Other GF chocolate sponge that I mentioned is more heavy and more moist sponges, something like brownie sponges. Also, if you have quinoa as a seed/cereal, you can make quinoa flour yourself. I have a video on KZbin how to make quinoa flour.

You can use date sugar or maple sugar. It’s possible to find in the US healthy stores or online. But not sure about other countries. Where are you from?

Do you concern scout quinoa flour? If so, please use a recipe for chocolate sponges from Bee Chocolate Orange cake or Truffle cake. Both on my channel. Very delicious sponges and no quinoa flour 💚

@ I found this All purpose Paleo GF Flour www.amazon.com/BakeGood-Replacement-Purpose-Gluten-Non-GMO/dp/B07Z46LGB6 It's written: Simple cup-for-cup replacement of all-purpose flour. Substitute for flour in any recipe. No other changes needed. So, use it for sponges from Bee and Truffles cakes :)
