I cooked this last night for some friends. Fantastic dish! 3 notes: add 1 tsp of cinnamon (really draws out the flavour of the duck), add 3 sprigs of rosemary and let them just sit in whilst it simmers and make sure you salt the dish well!

I am a big fan of Ragu, I had wild boar ragu in Florence, and this was even better, and it's so easy to make. I did let it sit for about 3 hours before I served it, and I think that made the flavor even better. I love your channel Donal, so many great recipes.

1) Good video. 2) They make aprons for a reason. 3) You need a bigger pasta pot. 4) Do you remove the skin from the duck before shredding or include it all? I was already planning on making this exact dish since I've had duck legs from the local duck farm in my freezer for too long. Bought the papparadelle & all the ingredients already and then searched for a video with a good method...this confirms almost exactly what I was planning on doing (so thank you!). I'd add some sprigs of thyme to the mirepoix, a bay leaf, maybe some orange or lemon zest & fresh pepper...but that's about it! I'm sure salt to taste too.

I am in Florida observing Covid19 lock-down. I roasted a duck two days ago and I went looking for a recipe to use the left over 1.5 lbs. of meat. This caught my eye. I will make this tomorrow including the pasta by hand. It is amazing the things I have learned to make in the past 2 months locked up. I think I will make some ravioli also with the ragu as the stuffing.

This is definitely my comfort food. I'm half Italian and grew up on the most wonderful flavors of Italian foods. They are the best. And duck, well, that is my go to meal in a restaurant. I would choose duck over chicken any day. What a great combo-pappardelle pasta and duck! They both are my favorite ingredients. I have made similar, but using "confit du canard", for a quick meal. I love duck and eat it often. Even buying wild ducks at the outdoor markets here in France. Also, like to make a mock cassoulet with canned beans and "confit du canard". Don't often see fresh duck legs here in France.

Made this last week. It was amazingly delicious and easy to prepare . Next time I'll be adventurous and add a shake of cinnamon to the meat side before searing and perhaps a little bundle of fresh thyme or rosemary in the braising liquid. Hey... life on the wild side! I had to make this. This may end up killing me. So good. Here in Germany they seem to have duck breast in the frozen section in the super market. Discovered this a few years ago and somehow it ends up being better value than the mediocre steak they also sell at a premium.
