The Spaniards also conquered the Philippines and, same with Mexico, left us with flan among other things. We call ours “leche flan”. Our recipes are almost the same except we don’t use whole eggs, we only use (depending on the recipe, 10-12) yolks. The coffee flan sounds good. Filipino variations do half pound cake/half flan cakes, or ube flan also. We also love to add the flan into our halo-halo.

Spain created both Philipines and Mexico. In Mexico they allied with local opptessed local tribes and overtrown the aztecs that practiced human sacrifices to the sun-god, and charged humans as tax of these oppressed tribes so they could perform those sacrifices. The philipinean tribes were oppressed by mainly ronin (japanese pirates) and had a big cultural devolepment under the spanish rule. Also one of the main figures of philipinean independence regreated his position years later, even attending the spanish king cemitery and asking for forgiveness, as the spanish treated the philipineans far better than the americans that substituted then.

You should put a tea towel in the bottom of your roasting pan. Keeps the flan pan from moving in roasting pan when you are transferring in and out of oven.

This is a very traditional dessert in Brazil. Here in Brazil we call this "pudim". This one specifically, pudim de leite. It's weird that what you guys call pudim/pudding is called "mingau" here. And flan here it's a completely different thing, a no-bake pudim set with gelatin. Also, we cook it via Bain Marie in the stove top, using a Bundt cake pan.

I have made this recipe which is pretty common to many Latin American countries. Personally I use a lighter recipe which uses just whole milk and sugar to replace the 2 cans of condensed and evaporated milk. The result is a lighter tasting flan.

I always use a nonstick pan to make the caramel for flan. I guess it's because no one told me it's more difficult to make it that way. I also.never add water (though I understand its purpose). It wasn't in the way I learned. I always make flan de café for a friend who's been to Spain and enjoyed it there. Different recipe, but I want to try your recipe for the custard. It looks a lot easier/less time-consuming than mine in which I take milk and sugar and cook until it reduces before tempering the eggs and adding everything else.

Our leche flan in the Philippines has a more caramel colored top. My Mom melts the sugar directly in the baking pan without any water.

I would recommend not adding the hot water until the pan is in the oven to reduce risk of burns due to sloshing water. Extend the oven rack, set the pan on the rack, add the hot water, and then gently push the oven rack back into place.
