Shredded sharp cheddar cheese! In Arizona, we called them "cheese crisps" and they are awesome baked in the oven at 350 for 5-7 min.. Maybe you already have this on one of your videos?

My family didn't make homemade tortillas but the New Mexican restaurants all had delicious tortillas and some would let you buy them buy the dozen. When I tried to make my own they never tasted right until I found a New Mexican recipe that used milk! Thanks for sharing!!

Yes, I Remember the smells of the delicious Tortillas cooking at the various New Mexican Restaurants growing up! I loved the ones that had them out in the open so you could see them being made. Yes the Milk definitely Makes a Huge Noticeable difference!

Bacon Fat is a Fun way to play around with the flavor of the tortillas while using the same recipe/ingredients. I Like using the fat from apple wood smoked bacon 🥓 but any type of Bacon fat can be used!

I love the idea of milk powder in the dough. A little advice about the negative comments, ignore them. Your hair is just fine down. You're not cooking food in a restaurant. If people want a thicker or thinner tortilla they can adjust that while making their own. Some folks just can't help but be critical because it's all they have in their lives to feel as if they have a little power 😊 Keep doing what you're doing and enjoying it ❤

I like thin and chewy tortillas and I like thick and soft tortillas, I too am New Mexican, and your doing just fine 🙂 people forget that the border wasnt always there, so those of us on this side also have Mexican/ Spanish roots.

The powdered milk is a nice twist. I've used it for English muffins, but have never seen or thought about it for tortillas. It should add a little stretchiness to the final product, I imagine. ❤

Hey, I never made tortillas till today . I didnt want to go to the store in the bad weather so I turned to you tube and followed your recipe. I think mine turned out shaped like airplanes but I think they tasted good with my beans. That bacon grease gave it good flavor. I think with more rolling pratice they should look nicer but the taste was right on and I like thick pliable hot tortillas. Great video. Thank you.

Living in Yuma, Sonoran tortillas were the only flour tortillas I knew about and would only eat until I saw your video, thank you so much for sharing your NM family's recipe, I'm going to give it a try this upcoming weekend, great video mi amigo! 🌞💗 Question about the powdered milk, can one use regular liquid whole milk or is powdered milk one of the secret ingredients for the end result of yummy? What brand do you use, Nido fortificada whole milk?

Thank you so much! When I don’t have powdered milk I’ll use a couple table spoons of Whole milk. You might have to add 1-3 T of flour to off set the difference. Any brand of powdered milk will do but here I am using “Bobs” The milk powder makes the tortillas Extra Tender 🤤

@@coleenlong8212 I’m Glad someone asked for a pasta recipe. I have a couple different recipes now depending on application. I will be doing a Herb potato gnocchi first but I definitely plan on doing some Pasta. Egg, and semolina based pastas are my favorite, and I personally do season my dough but only with salt.

Haha, as a Chef I simply call them “Rustic” I’m weird like that though. I’ve worked years in Fine Dining, and I find food more beautiful when they’re all different. Being from Santa Fe, New Mexico I’ve adopted the Native American view of things somewhat in that only Great Spirit is Perfect, and food (and everything else) isn’t meant to be “Perfect”. it came out near perfect in the beginning when you put it on the pan and then became really rough around the edges afterwards but in the end it's still gets the job done. Much like life

Hello @jcman-lp6lg It’s really dry right now this time of year. Try adding an extra 2Table spoons of warm water next time you make them, and it should account for the lack of moisture in the Air! Try it out and let me know!

Are the tortillas supposed to be slightly crispy once they're done in the pan? I tried to roll one but they are not soft and pliable and tear apart. Am I doing something wrong?

They’ll get crispy if you leave them on too long. Have your pan be hot before placing the Tortilla on it. Also try using medium heat. If they arn’t soft increase the baking soda by 1/2tsp, and adjust your water. It sounds like You might need too add a couple more Table Spoons of water. Flour acts differently depending on time of year. Also your altitude will greatly effect the end result. If you’re at a higher elevation you’ll definitely need to add a bit more water. Flour absorbs more liquid when above sea level. I hope this help! Please comment back if you need any more support. I am here to help

As you take the cooked tortillas out of the pan, stack them on a plate and keep the plate covered from the beginning with a folded cloth or even a bowl. This will trap steam and all the tortillas will then be flexible when you are finished cooking the tortillas and are ready to use them. You should use these tortillas on the same day that you make them.

It’s a family recipe. One that grandma would make weekly! She didn’t use bacon fat though. The powdered milk is a New Mexican thing.

Lose the hair! Either tie it back or put on a hairnet. I've found enough hairs in my food to know that people shed hair...head hair, arm and hand hair, beard and mustache hair, and it gags me to find one in my food. Please, as beautiful as your hair is, cover it. Thank you.Your tortillas are THE VERY BEST!

When I’m working in professional kitchens I do indeed Tie my hair up! I went to culinary school, and Food Safety is extremely important to me. When I’m cooking for myself I do whatever feels more comfortable. Sometimes it’s up and sometimes it’s down (however lately it’s been up more often then down only because it has gotten a lot longer) Thanks for the compliments!

Some people aren't as clean as you and would think nothing of letting their dirty hair and nails touch the food. They will emulate you out of admiration, so perhaps a reminder to them to follow safe habits would be a good idea. Thank you for your kind response.

Did you put powdered milk in recipe ? Why? The rolling pin could of been smaller. My dad didn't make tortillas too thin..they were nice.

Your Dad makes them the way I like them too then, Not too thin! Yes I use powderd Milk. It’ll make your tortillas more Tender, adds a depth of flavor, and makes them tastier overall. Thanks for the comment! (I think my rolling pin could be a bit bigger honestly 😜)

@@Micheller1210 you don't make tortillas much do you? The medium size rolling pin is a lot easier to use. My opinion since my mom made a lot of them. Mom is gone now but we continue on with rolling pin.

Well yes, and No.. You see the exact historical origins of the flour Tortilla are a little difficult to trace. But it is known that in North America Corn 🌽 was what was used by the Natives. The Spanish however did not like using Corn for food, and brought over the Flour Tortilla. That and possibly Some Spanish Jews from the Iberian Peninsula. Because Corn isn’t Kosher they would make Tortillas out of Wheat. The Spanish Catholics also viewed wheat as Holy as they used it for the Eucharist. One things for sure though is that Flour Tortillas are Delicious 🤤!!!

@@zanecote it doesn't matter where your cooking at...hair needs to be in net or pulled back. Healthy ways are needed where ever food is involved. That is my way and your way is yours. Healthy eating and cooking. Just my own opinion and everyone has one.

@@rosaleacorle2854 you said it Best “this is my way and your way is yours”, and when I cook at home I don’t always put my hair up but If you do then great for you but you don’t have to lie and say hair is unhealthy. In fact the FDA even says so “While human hair is unappealing to some people, there is no evidence that it is unsafe or preventable.” Also if you eat out at’ll you are in fact eating human hair. A study shows that the average fast food customer swallows 100,000 fast food employee hairs every year. Think about that next time you’re eating out 😝

That’s actually sad that you, and your friends are so immature as to do that. I have never once laughed at my Mexican friends for not having perfect English accents here in the states. Lol but anyways I’m still laughing because the point of my content is to get people to cook a little more at home.
