I'm Cebuano, but I actually think that Iloilo has the best cuisine in the Philippines. Sure Pampanga is named the culinary capital, but Iloilo has it better for me. Though I've only been there once, it's the food that I can never forget. I used to be very picky with food, Ilonggo cuisine opened up my palette and made me learn to explore. The plethora of flavour profiles is incomparable I think.

Totoo. As an ilongga, living in cebu for 8 yrs didnt change my ilonggo palate😂. It took me 2 mos pra mag adjust sa timpla ng mga food sa mga carenderia. In restos okay nmn kc standardized nmn ung timpla nila across all branches.

The past decade that I am back here, I have observed the changes and I have to say, Ilonggos are so flexible and adaptable . Despite the modernization happening around, we in the city of iloilo never stopped engaging with our culture and history. IN Iloilo, you can find tradition merging with modern lifestyle. We are so open to try new things and our palettes will always be looking forward to something new and evolving!

Ilonggo dishes are underrated. Been living in cebu for 8yrs and took me 2 months to get accustomed to the flavor of their food. Iba ung timpla ng food nila, not in a bad way but just doesnt taste like how we all expect it to taste. I tried their most raved lechon and didnt get why its so hyped. Its delicious, but they dont use tanglad but instead, spring onions. Restaurants serves good food. The usual kind of taste we're all used to, but in small eatries ir carenderia, expect the taste to be a bit different or odd but i woulndt say its bad at all. Its just tastes differrent.
