Where does the world’s most exciting modern Indian chef eat? Chef Manish Mehrotra of Indian Accent reveals his guide to native India, as well as his favorite spots in New York City. Watch as he prepares blue cheese naan, pumpkin and coconut shorba, and potato sphere chaat with white pea mash.
NYC restaurants discussed in this episode include Uncle Boons and El Porrón. Chef's favorite restaurant in the world is Mathias Dahlgren in Stockholm.
Chef Manish was kind enough to give us his awesome foodie guide to India, which includes a trip to five cities:
Delhi - Delhi is known for Indian street food: chaat. Kamla Nagar market is the perfect place to explore and eat chaats.
Mumbai - Also known as Bombay, Chef Manish's restaurant of choice here is Swati Snacks. Mumbai is known for its Gujarati food, which is a mostly vegetarian cuisine.
Amritsar - In the northeast of India, Amritsar is known for Punjabi food and Northern Indian food. Chef recommends Kesar da Dhaba for traditional Punjabi cuisine.
Chennai - Chennai has "the best south Indian food" at Southern Spice at the Taj.
Kolkata - Known for its Bengali food. Chef Manish recommends Bjojohori Manna.

One of the signature dessert in this restaurant is a rip off from a street vendor's invention called Daulat ki chaat. It is a genius dish involving hours of manual churning of milk starting wee hours of winter night when temperature is lowest to collect milk froth condensed with dew. Successor of the street vendor still sells on a small cart in delhi in winters. To me thats food invention to remember and savour for ages... not mini nan stuffed with blue cheese.

I don't know what's the problem with people. If you don't like the place don't eat there. Stop spreading hate. It's upto to individuals to decide how they want to eat food. And it's not just about eating the best food in the world. It's about the whole experience. That's like saying - why go to concerts when you can listen to songs on Spotify.

Dude, I'm 100% positive you've never been to any restaurant of this kind. They literally serve 14, fourteeen, one and four, courses in his restaurant. If the portions were bigger, you would be fed up by the time the 3rd plate arrives, and in these kind of menus what they're trying is to give you the best representation of the entire spectrum of what they're capable of doing. And they have to be expensive. In any of those 14 plates, you are paying because they are giving you the best produce, the work of an skilled person with hundreds if not thousands of hours of practice, the talent of the guy who invented the dish, and in some if not most of them, the research that goes into finding new technics to cook. All of that, combined with the insurmountable ammount of stress the people that work in such a restaurant endure, because the margin (that is, profit that they make versus the cost) at which they usually work is so little that, if they don't make it in this years michelin star guide, or in the top50 list or whatever it is, they go bust, and quickly. Heck, even restaurants that were the #1, like El Bulli, WEREN'T making money. I suggest you to direct this rage against McDonalds, you'll be looking at a multi-million dollar company that is selling crap to its customers, but hey, you'll be full for less than 10 bucks.

Pretentious food. Best Indian food is found in streets and homes of India... and what a range it is.

Dismissing something as pretentious is the quickest way to ignorance. He literally recommended kamla nagar as the epitome of chaat in Delhi. And he’s not comparing his restaurant to any of those places. Fine dining is just a different expression of food and doesn’t range higher or lower than any other form.
