These look beautiful! Years ago, I used to work in a fancy hotel and they made wonderful tarts exactly like these. However, because they had to be prepared in advance, the pastry chef lined the baked shells with melted chocolate to create a barrier so the pastry cream wouldn't make them soggy. Once the chocolate hardened, he then filled with cream, added fruit, and glaze. LOVE LOVE LOVE your videos and Instagram offerings!!! You're a genius and a real inspiration!

Made these today - pretty good! I would reduce the sugar (it’s a tad sweet for me). If you want an extra silky and smooth cream, you can blend the custard & put it through a sieve!

I made this- truly everyone who ate it was Tartmatised. The base was heavenly although the custard filling didn't set due to my own fault of taking it off the flame soon however that recipe is perfect. Will make it again and make everyone tummy really happy. Truly thank you :)

@@humss5884 Right when it starts to thicken up (like A LOT) and it starts to boil, and cook for about a minute more while boiling. The total time really depends on the heat. Also, you don't really need to count how many minutes, you can tell when it's done when it *really* starts to thicken and it boils. (sorry i'm soo late)

One thing I would appreciate is consistency across the recipes on youtube versus the website. This recipe is a great example. This video says 226 grams of butter but the website only talks in tablespoons....thanks so much

Tried the recipe "bright eyes😉", loved it. Tips, if you dont have ring molds use foil with holes in it. I used silicone mold and foil. The pastry was very sweet so if you like it with a balance, just use a little less confection sugar in the dough. My daughter loved them though. Thanks, been needing a dessert recipe that isn't chocolate for my arsenal. Again, thanks and keep doing what you doing. 👌👌👌👌👌👌🥰

Ok... so I made this for Christmas 🎄 this year. I’m not a drinker and really can’t stand the taste, so I was a bit worried about the brandy. I did exactly what he said to do, including the the brandy. The taste was out of this world. Soooooo good!!! The brandy enhanced the taste of the apricots.

Syed Sami you can tell by the texture. If there are no bubbles left on the top and the yellowy cream is visible and so thick that it becomes harder to whisk its done. Take it off the heat, whisk it a little more to check and make sure it’s fine, then put it in a bowl, cover it with the plastic and place it in the fridge to let it cool.

That is such a simple way of making a blind pastry shell !!! I'm going to order some of those De Buyer metal rings. No more struggling with floppy pastry in a conventional loose-bottomed flan ring and then tamping the corners down with a little ball of pastry.

In school they recommend us used the wood spoon to whisk until the spoon was covered with the custard they done. Everyone does different. The important it’s the results. Tart are expensive and I am glad he shows all the work.

Hello Mr. Preppy Kitchen! I just wanted to write that I have tried your recipe and it is STUPENDOUS! I made it for my dad, mom, two brothers, and myself. My dad and I can't have dairy so I tweaked it and made the pastry cream with oatmilk (It was the best thing ever, I could have piped it directly into my mouth.) and I used coconut oil for the tart shells. The tart shells came out...Well... could tell they would have been a light, crispy tart shell if I had the right equipment and if I had used the ingredients you showed, but I tweaked it a lil too much. They were alright, tasted like coconut oil spooned into your mouth. 😂 My bad! Thank you for sharing your recipe. I'm definitely going to use it again. Maybe I should buy some vegan butter next time to alternate. 🍓🫐😛
