OK here is our lamb story. Lori and I just so happened to be doing a couple day layover in Elko Nevada the beginning of July. A neighbor told us the town was having their annual Basque festival. We missed the festivities but made it to a local restaurant called "The Star" hotel Basque dining. Served family style. I ordered traditional lamb dish, made like beef roast. Very tender falling off the bone. I found it was best to eat it fresh out of oven because as it cooled, it became gamey. I would recommend this place. Your seated next to your neighbors like family style. And it's like a 4 course meal. I thought I took pics but Lori and I only took a selfi outside the restaurant. Side note, I see how much work you guys put into your videos, I hope youtube algorithm starts doing its job.

Oh, that sounds amazing!! Thanks for sharing your story. If we every get to Nevada, we'll have to check it out. Sounds very much like leg of lamb. We made it in our Sous Vide and it was amazing!
